Chickpea Salad Sandwich


This protein packed Chickpea Salad Sandwich is truly a nutritious way to enjoy summer veggies.. Whenever i feel that i am in need of taste, nutritions and quick healthier one, i prefer to go only for Sandwiches. As we know Sandwiches can prepared in many ways or we can say that they have endless varieties, so Chickpea Salad Sandwich is also one of them. So if you are Sandwich lover then i sure you gonna like this recipe. In this recipe i am using Chickpea Salad to prepare Sandwich. Its perfect for lunch or breakfast, to make it more tempting add your favourite veggies in it and enjoy your healthy and guiltfree meal with delicious taste.

*Ingredients For Chickpea Salad*
1 cup cooked chickpeas
1 tea spoon olive oil
1 small onion (finely chopped)
1 big tomato (finely chopped)
1 green chilli (finely chopped)
1 cucumber (bite-size chunks)
1/4 cup chopped carrot
1/4 cup frozen sweet corn
1/4 cup chopped capsicum
Handful of fresh cilantro or parsley
Chopped lettuce as per choice
Rock salt and fresh ground black pepper powder (as to taste)
2 table spoon lemon juice

*For each Sandwich*
Chickpea Salad
2 slices of Bread
2 pieces of Lettuce
Cheese spread (low fat)

Instructions

1. Take a big bowl and add cooked chickpeas in it then add all veggies, olive oil, salt and black pepper powder together in this bowl.

2. Pour fresh lemon juice over the salad and toss. Then garnish it with fresh cilantro or parsley, now Salad is ready to prepare sandwiches.

3. To assemble each Sandwich, lightly toast 2 slices of bread, and apply cheese spread to one side of both breads.

4. Then layer each with a piece of lettuce. Place a heaping portion(or as you want) of the Chickpea Salad onto one slice of bread, then fold the other on top, now Chickpea Salad Sandwich is ready.
You can serve it with fresh fruit juice….. Enjoy😊!!

Shallots/Sambhar Onion Gravy


Shallots gravy is a south indian dish. In this recipe shallots are cooked in sesame, peanuts and spices mixture. Basically it is served with biryani but we can also serve it with plain rice, chapati or any kind of indian bread.

Especially in hyderabad, it is prepared in wedding and other special occasion but You can make it when you want to eat somthing spicy with your daily meal. So lets get started to make this spicy shallots gravy.

Ingredients
300 gram shallots/sambhar onions(washed and peeled).
1/2 cup onion puree
1 table spoon ginger paste
2 table spoon coriander seeds.
2 table spoon peanuts.
5 whole red chillies.
1/2 tea spoon cumin seeds.
2 table spoon sesame seeds.
1.5 table spoon tamarind pulp.
1/2 tea spoon mustard seeds
1 tea spoon fennel seeds powder.
8 to 10 curry leaves
1 tea spoon chilli powder
1/2 tea spoon garam masala (mixed spice).
1/2 tea spoon turmeric
1/2 tea spoon fenugreek seeds
1 table spoon oil
Salt to taste

Instructions

1. First of all we need to roast peanuts, sesame seeds, coriander seeds, cumin seeds, whole red chillies together for about 4 to 5 minutes.

2. Now with the help of mixer grinder, grind the roasted mixture to fine powder.

3. Now heat 1 tea spoon oil in a pan and saute the shallots about 2 to 3 minutes.

4. Now remove them from the pan and add remaining oil in the same pan.

5. Add mustard seeds, fenugreek seeds and curry leaves in it and saute them about 1 to 2 minutes.

6. Now add onion puree and ginger paste in it and saute them until it becomes pink in color.

7. Add turmeric, chilli powder and salt in it then add grounded spice mixture and roast them until oil separates.

8. Now add all spice powders 1 cup of water and shallots in it and cook them until they become tender.

9. Add tamarind pulp and bring this to boil, cover and simmer for 7 to 8 minutes or until oil separates.

Now shallots gravy is ready to serve…enjoy this tangy gravy with rice, paratha or as your choice.

Crunchy Vegetable Nuggets

Crunchy Vegetable Nuggets recipe is perfect starter recipe for anytype of small party like kids birthday party or kitty party.

These are made from lots of healthy vegetables and to add more value in taste – these are very soft from inside and crunchy from outside. All age groups like them because of its freshness and crunchiness. These Vegetable nuggets are perfect for kids lunch box too. You can serve them with any type of chutney and tomato sauce. For this recipe i used carrot, peas, potatoes, corn and onion but you can add your favorite veggies to make it more flavorful.

Ingredients

2 medium potatoes (boiled and peeled).
1 small onion (finely chopped)
1/3 cup sweet corn (frozen)
2 or 3 green chilli (finely chopped)
1 small carrot (finely chopped)
1small capsicum (finely chopped)
50 gram fresh coriander leaves (finely chopped)
1/2 cup green peas (frozen)
1/2 tsp garam masala
1/2 tsp organo leaves
Salt as required
2 tbsp plain flour(maida)
1 tbsp corn flour
2 tbsp bread crumb
1 tsp coriander powder
1/2 tsp black pepper powder
1/4 tsp chaat masala
2 tbsp coarsely crushed corn flakes

Instructions

1. To prepare crunchy Vegetable nuggets first we need to take a big bowl and grate the boiled potatoes in it.

2. Add frozen green peas, chopped carrot, onion , chilli, coriander, capsicum and sweet corn in it.

3. Now mix plain flour, 1 tbsp bread crumb and all spices and herb in it and then mix all together and make a thick dough from it.

4. Now take another bowl add 1 tbsp corn starch, 1 tbsp all purpose flour and 1.5 tsp bread crumb in it and make a smooth paste with help of little water. (Meanwhile heat the oil in a pan or kadai for frying the nuggets).

5. Now take a lemon size ball from the Vegetable dough and shape them to round or square as your choice.

6. Then dip it, in corn starch paste and then bread crumb and corn flakes curmb powder.

7. Now deep fry them into hot oil until it becomes golden brown in color and then transfer to the absorbent paper, likewise prepare other nuggets.

Now crunchy Vegetable nuggets are ready to serve…enjoy them with hot cup of tea and tomato ketchup or any types of chutney..😊
