This protein packed Chickpea Salad Sandwich is truly a nutritious way to enjoy summer veggies.. Whenever i feel that i am in need of taste, nutritions and quick healthier one, i prefer to go only for Sandwiches. As we know Sandwiches can prepared in many ways or we can say that they have endless varieties, so Chickpea Salad Sandwich is also one of them. So if you are Sandwich lover then i sure you gonna like this recipe. In this recipe i am using Chickpea Salad to prepare Sandwich. Its perfect for lunch or breakfast, to make it more tempting add your favourite veggies in it and enjoy your healthy and guiltfree meal with delicious taste.
*Ingredients For Chickpea Salad*
1 cup cooked chickpeas
1 tea spoon olive oil
1 small onion (finely chopped)
1 big tomato (finely chopped)
1 green chilli (finely chopped)
1 cucumber (bite-size chunks)
1/4 cup chopped carrot
1/4 cup frozen sweet corn
1/4 cup chopped capsicum
Handful of fresh cilantro or parsley
Chopped lettuce as per choice
Rock salt and fresh ground black pepper powder (as to taste)
2 table spoon lemon juice
*For each Sandwich*
Chickpea Salad
2 slices of Bread
2 pieces of Lettuce
Cheese spread (low fat)
Instructions
1. Take a big bowl and add cooked chickpeas in it then add all veggies, olive oil, salt and black pepper powder together in this bowl.
2. Pour fresh lemon juice over the salad and toss. Then garnish it with fresh cilantro or parsley, now Salad is ready to prepare sandwiches.
3. To assemble each Sandwich, lightly toast 2 slices of bread, and apply cheese spread to one side of both breads.
4. Then layer each with a piece of lettuce. Place a heaping portion(or as you want) of the Chickpea Salad onto one slice of bread, then fold the other on top, now Chickpea Salad Sandwich is ready.
You can serve it with fresh fruit juice….. Enjoy😊!!
