Healthy Chickpea Salad
This protein packed salad is such a delicious and nutritious way to enjoy summer veggies. This healthy salad is loaded with fresh vegetables, herbs, chickpeas and some spices only.
It is very easy to prepare so this one is a perfect option for tiffin box, snacks and breakfast as well. In this recipe i am using fresh boiled chickpeas but you can also use canned as per your interest.
Chickpeas salad recipe is so versatile, so you can add or remove vegetables as per your taste and availability.
1 cup cooked chickpeas
1 tea spoon olive oil
1 small onion (finely chopped)
1 big tomato (finely chopped)
1 green chilli (finely chopped)
1 cucumber (bite-size chunks)
1/4 cup chopped carrot
1/4 cup frozen sweet corn
1/4 cup chopped capsicum
Handful of fresh cilantro or parsley
Chopped lettuce as per choice
Rock salt and fresh ground black pepper powder (as to taste)
2 table spoon lemon juice
1. Take a big bowl and add cooked chickpeas in it.
2. Now add all veggies, olive oil, salt and black pepper powder together in this bowl.
3. Pour fresh lemon juice over the salad and toss. Then garnish it with fresh cilantro or parsley. And serve immediately.
