Spicy Black Chickpeas Sprouts Salad/Chaat

Natural sprouts are good for health and mind development. They are wonder food due to its high nutritional value. Sprouts are associated with amazing health benefits, it ensures blood purification and strengthens the immune system.

There are many recipes of sprouts here and today i am gonna share one of them, this is spicy black Chickpeas salad. In this recipe i used some salad vegetables and spices along with sprouted black chickpeas/chana. So lets begin to make this super yummy salad…

 

Ingredients
1 Cup sprouted black chickpeas
1 small onion (finely chopped)
1 big tomato (finely chopped)
1 green chilli (finely chopped)
1 small boiled potato (cut into small cubes)
50 gram fresh coriander (finely chopped)
1/2 tea spoon black salt
1/2 tsp or as to taste rock salt
1 tsp coriander powder
1/4 tsp black pepper powder
1/2 tsp chaat masala
2 tsp lemon juice

Instructions

1. To prepare Sprouted chana chaat, we need to soak the dry Chickpeas overnight or for 7-8 hours.

2. Once they are soaked, drain the water and tie them in a clean damp cotton cloth.

3. Place it in a plate/bowl or plastic box and keep it in a warm place for about 24 to 36 hours. Sprinkle water every 4 to 5 hours at regular intervals until sprouted.

4. Now Boil the sprouted black chickpeas till they are tender and strain the excess water(do not over cook).

5. Lets the sprouts cool, then take a big bowl add all ingredients together and mix well. Now spicy black chickpeas sprouts chaat is ready, garnish it with fresh coriander leaves and serve immediately…Enjoy!!😊

Cheesy Bread Disc


Cheesy bread discs are like drops of water in desert when you are hungry and need some quality food. This is a quick appetizer recipe made with bread, cheese and veggies. I am also using Mozzarella cheese but you can skip it in case you dont like it or like to avoid it.

wp-1484770622214.jpgTo add spicy flavor, i am using chilly sauce but you can skip this ingredient as per your taste. Or on other side, if you like to adjust the spiciness then you can increase or decrease the quantity of tomato sauce. wp-1484770627959.jpg

There can be multiple options for adding vegetables like carrots, capsicum, olives, mushroom, broccoli etc. You can add or remove vegetables as per your choice. I am going to share recipe in oven method but you can also make it on non stick tawa or pan.

Ingredients

8 bread slices (white or brown)

1 tblsp chopped tomato

1 tblsp chopped onion

1 tblsp finely chopped coloured capsicums (red, yellow, green)

1 tbsp chopped carrot (optional)

1 tblsp sweet corn

2 tblsp grated cottage cheese

2 tblsp grated mozzarella cheese

1 tsp black paper powder

1/2 tsp organo leaves

2 tblsp tomato ketchup

1 tsp chilli sauce (optional)

1 tsp butter

Salt to taste

 

Instructions

1. First of all we are preparing discs, take a circle cookie cutter(to get maximum big circle from the bread) and cut all bread slices to circles(as shown in picture).

2. Now take four round bread slices and cut smaller rings out of them(as shown in picture). Now cover all the slices and keep them aside.

3. For filling, take a big bowl, now add all chopped veggies and Spices in it.

4. Then add 1 tblsp tomato ketchup, 1 tblsp cottage cheese, 1 tblsp mozzarella cheese and crushed organo leaves in it and mix them well.

 

5.Now take a medium bowl and add soft butter, remaining tomato ketchup, chilli sauce, cottage cheese, mozzarella cheese, pinch of salt and pinch of black pepper powder in it and mix it well.

6. Now preheat the oven on 180℃.

7. Now apply prepared butter spread on all four round shapes slices.

 

8. Now cover all of prepared slices with bread ring (as shown in picture).

9. Press the edges lightly so that the rings stick to the slice properly.

10. In the centre of the ring, put a tbsp of cheesy veggies filling (as shown in pictures).

11. Place all the ring in a baking tray and bake them in preheated oven for about 7 to 8 minutes or until they become golden in color.

Now cheesy bread disks are ready. Serve them with tomato ketchup or hot cup of tea or as your choice….. Enjoy😊!!

Moong Daal Potli Or Deep Fried Split Green Gram Pouch


Moong Daal Potli or Deep Fried Split Green Gram pouch is a starter Recipe. These mini pouchs are inspired by the Asian Wontons, momos, dimsums and dumplings. It taste really good, and also looks very unique because of their shapes. In this recipe i am using moong daal stuffings, but you can stuffed them with mix vegetables, dry fruits, noodles and many more, based on your choice. Although i am sharing deep fried version of this recipe, but if you want a healthier alternative, then you can also bake them.

This is super easy to wrap stuffing… It might be little struggling in the beginning but after two or three potli, you going to feel that you are expert in potli making😜this is the funny part of this recipe😃😃So lets begin to make our daal potli…..

Ingredients

1 1/2 cup refined flour

2 tblsp clarified butter

Salt to taste

Water as needed

For stuffing

1/2 cup split skinless green gram (Soaked)

Pinch of Asafoetida(hing)

1 tsp garam masala

1 tsp chilli powder

1 tsp dry mango powder(amchoor)

2 tblsp coriander powder

2 tblsp coarsely grounded fennel seeds

2 tsp oil

1 tsp salt

1.5 tsp raisins

1 tblsp chopped almonds

Instructions

1. Take a big bowl, add refined flour, clarified butter and salt in it. Mix well.

2. Now add enough water and knead the dough, cover and keep aside for 30 minutes.

3. To prepare the stuffing, coarsely ground the soaked moong daal (without water)as shown in pictures.

4. Now heat a non stick pan, add 2 tsp cooking oil in it. Then add all spices, chopped almonds, raisins and grounded moong daal in it. Saute for 3 to 4 minutes (stir continuously).

5. Now turn off the flame and transfer the mixture into a bowl.

6. Now divide the dough into ten equal sized portion and roll into balls.

7. Flatten them slightly with your palm to form discs. And roll out the  discs into small pooris, then apply little water on edges.

8. Now place 2 tsp stuffing in the center, form the pleats of pouch. Evenly and carefully pinch together the edges of the poori to form pleats and complete them as a pouch shape(as shown in pictures).

wp-1485110520239.jpg9. Now heat oil in a kadai or deep pan, fry them on medium flame until they turn in golden brown in color. Then take them out from the oil and place them on absorbent paper.

Paneer Tikka (Prepared in Oven)

Today i am going to share an easy and super tempting recipe …. Yup this is spicy Paneer tikka recipe … Although the most traditional way is to cook it in clay oven or we can use stove but i am going to use oven method which is best and time efficient. Paneer tikka can be used as starter of your party or you can use it as side dish. This recipe uses hung curd and other spices as marinade. Colorful veggies and cottage cheese cubes makes it tempting and tasty .. So lets begin to make this super tempting starter in oven..

 

Ingredients

 

300 gm cottage cheese or paneer

1 Onion

1 Green capsicum

1 Yellow capsicum

1 Red capsicum

 

To Marinade

 

1 Cup hung yogurt

1 tsp ginger paste

1 tsp mixed spice or garam masala

1 tsp coriander powder

1 tsp kashmiri red chilli powder

1 tsp cumin powder

1 tsp chat masala

Bamboo skewers as needed

Salt to taste

 

Instructions

1. If you are using wooden skewers like me then submerge in the water for 15 to 20 minutes. At the time of using, wipe them. And if using metal skewers, use as it is, no need to soak them.

2. For hung curd you need to take yogurt in muslin cloth, put it in the strainer for 1-2 hrs and let all the water drain out).

3. Meanwhile cut veggies into 1 inch and cube the paneer (as shown in pictures).

4. Now add this thick yogurt in a bowl. And add all the spices, ginger paste and salt in it, Mix it well.

5. Now mix all ingredients together and cover it with plastic wrap and let paneer and veggies marinade in the fridge for at least 4 hrs.

6. Now preheat the oven to 180 ℃. Meanwhile line a baking tray with aluminum foil.

7. Apply some oil on prepared tray and then arrange the veggies and paneer on the prepared skewer(as shown in pictures).

8. Apply some oil on the prepared tikka sticks and bake them in preheated oven for about 12-15 minutes.

 

9. After 15 minutes remove it, flip it and brush with oil and then again bake for 10-12 minutes.

Now hot spicy paneer tikka is ready to serve… Garnish with lemon slices and enjoy paneer tikka with spicy green chutney….😊

Here am sharing mixed vegetables stuffing, you can change the stuffing according to your taste. Like you can use sweet filling or cheese or many more options are here for stuffing. Ingredients

1 cup all purpose flour

2 tbsp cooking oil

1 tsp instant dry active yeast

1/4 tsp salt

1tsp sugar

Luke warm water as needed

 

*For stuffing*

1 potato (boiled & grated)

1/4 cup frozen corn

1 small carrot (finely chopped)

1 tbsp frozen green peas

1 green chilli (finely chopped)

1 small capsicum (finely chopped)

1/2 tsp chopped fresh coriander leaves

1 tsp kasoori methi

1/4 tsp garam masala

1/4 tsp chat masala

2 tbsp canola oil

1/4 tsp red chilli powder

1/4 chaat masala

Pinch of black pepper

1/2 tsp coriander powder

Pinch of asafetida

1 tbsp butter

1 tsp white sesame seeds.

Instructions


 

1. Take a big bowl and add all purpose flour, Instant active yeast,salt,sugar and 1 tbsb oil in it.

2. Now knead a dough with the help of luke warm water. Knead it until it become soft and smooth.

3. Now apply some oil over the dough and keep aside for 1.5 hrs, at warm place like a turned off microwave or oven.

4. Meanwhile we prepare stuffing.

*For the stuffing*


1. Heat 1 tsp oil in a pan over medium flame, once hot add the cumin seeds, kasoori methi and Asafoetida.

2. Add all chopped vegetables and spices. Mix them very well together and cook for 4 or 5 minutes then switch off the flame.

3. Now take dough and divide into 6 equal portions.

4. Take one dough ball and flatten it with the help of your thumb and finger.

5. Now place 1 tbsp stuffing on it and bring the edges of dough together and press to seal then roll back in round shape and place on a greased baking tray.  Similarly prepare the rest as well.

6. Cover the buns with cotton napkin and keep aside for 30 minutes at warm place.

7. After 30 minutes buns will puff up double in size and now apply some melted butter on buns, sprinkle some sesame seed over them and then  bake them in preheated oven at 200℃ for about 12 to 15 minutes.

8. Bake them until they turn in golden brown in color.The Mix Veg stuffed buns are ready to serve…..Enjoy with tomato sauce or any other flavor of sauce😊

*वेजिटेबल स्टफ्ड बन*


 

आवश्यक सामग्री

1 कप मैदा

2 बड़ी चम्मच तेल

1 छोटी चम्मच इंस्टेंट ईस्ट

1/4 छोटी चम्मच नमक

1 छोटी चम्मच चीनी

हल्का गरम पानी आवश्यकतानुसार.

*स्टफिंग के लिए आवश्यक सामग्री*

1 आलू (उबला ,छिला व् कसा हुआ)

1/4 कप फ्रोज़न मक्का के दाने

1 छोटी गाजर (छील कर बारीक़ कटी हुई)

1 बड़ी चम्मच फ्रोज़न मटर

1 हरी मिर्च बारीक़ कटी हुई

1 छोटी शिमला मिर्च (बारीक़ काटी हुई)

1/2 चम्मच बारीक़ कटा हुआ हरा धनिया

1 छोटी चम्मच कसूरी मेथी

1/4 चम्मच गरम मसाला

1/4 चम्मच चाट मसाला

2 बड़ी चम्मच कैनोला तेल

1/4 चम्मच लाल मिर्च पाउडर

1 पिंच काली मिर्च

1 पिंच हींग

1 बड़ी चम्मच बटर

1 छोटी चम्मच सफ़ेद तिल

नमक स्वादानुसार

 

*निर्देशानुसार बनाएं*


 

1. एक बड़े कटोरे में मैदा, ड्राई एक्टिव ईस्ट, नमक, चीनी और 1 बड़ी चम्मच तेल डाले और हल्के गरम पानी की सहायता से मुलायम आटा गूथ कर तैयार कर लें.

2. अब आटे के ऊपर थोड़ा सा तेल लगाकर, आटे को 1.30 घंटे किसी गरम स्थान पर रख दें जैसे की स्विच ऑफ किये हुए ओवन या माइक्रोवेव में.

3. इस दौरान हम बन के अंदर भरने वाली फिलिंग को तैयार करेंगे.

*स्टफ्फिंग तैयार करने की विधि*


 

1. पैन में एक छोटी चम्मच तेल गरम करें, अब इसमें जीरा, कसूरी मेथी और हींग डालें.

2. अब काटी गई सभी सब्जियां और मसाले डालकर अच्छी तरह मिलाएं और इन सब्जियों को 4 से 5 मिनट तक ऐसे ही पकाएं और उसके बाद गैस बंद कर दें.

3. अब आटा लें और उसे 6 बराबर भागो में बाँट लें

4. आटे का एक भाग उठाए और अपनी उंगलियों व् अंगूठो की सहायता से इसे अपनी हथेली पर गोल आकार में समतल बना लें(जैसा की तस्वीरो में दर्शाया गया है)

5. अब इसके केंद्र में 1 बड़ी चम्मच तैयार की गयी स्टफ्फिंग रखें, और सभी किनारो को आपस में मिलाकर बंद करके गोल आकृति दें. तैयार किये बन को ग्रीस की गई बेकिंग ट्रे में रखें और बाकि बन को भी ऐसे ही तैयार करें.

6. अब तैयार किए गए बन को किसी सूती कपडे से ढककर 30 मिनट के लिए किसी गरम स्थान पर रख दें.

7. 30 मिनट के बाद बन फूलकर तैयार हो जायेंगे अब इनके ऊपर पिघला हुआ मक्खन लगाएं और सफ़ेद तिल छिड़के. इसके बाद बन को 200℃ पर 12 से 15 मिनट के लिए बेक करें.

8. बन को सुनहरी होने तक बेक करें. अब स्वादिष्ट मिक्स वेज स्टफ्फड़ बन तैयार हैं….आप इन्हें टोमेटो केचप के साथ या अपनी पसंद की किसी भी चटनी के साथ परोसें और आनंद लें…😊

Crispy Masala Peanuts are also known as Sing bhujia. This bold, savory snack is most commonly enjoyed in the evening with a cup of tea, but rest we can have it in the way we like. In this recipe peanuts coated with gram flour and spices, which is very easy to make and a most favorite snack for all age groups. They can be deep fried, baked or microwaved, using the same ingredients. But today i am sharing the deep fried method. So lets begin to make our crispy masala peanuts.

Ingredients

1 cup peanuts

2 tbsp gram flour

1 tbsp rice flour

1/2 tsp red chilly powder

1/2 coriander powder

2 pinch chat masala

1/4 cup water

2 pinch black pepper powder

1 tsp oil

Salt to taste

Oil to fry

Instructions

1. First we need to take a big bowl, mix all ingredients together. Mix all nicely using little water.

2. Remember add less water and making sure the spices and flour stick to the peanuts uniformly.

3. Heat the oil in a kadai or frypan on medium heat.

4. Fry the peanuts until they turn golden brown.

5 When they are done, take them out from the oil and place them on a absorbent paper.

6. At this time these are not much crispy but after cooling to room temperature, the peanuts should be crispy.

7 Now Crispy Masala Peanuts are ready, sprinkle some chat masala and serve with a hot tea.

क्रिस्पी मसाला मूँगफली

आवश्यक सामग्री

1 कप मूँगफली (गिरी)

2 बड़ी चम्मच बेसन

1 बड़ी चम्मच चावल का आटा

आधी छोटी चम्मच लाल मिर्च पाउडर

1 छोटी चम्मच धनिया पाउडर

2 चुटकी चाट मसाला

1/4 कप पानी

आधी छोटी चम्मच काली मिर्च पाउडर

1 छोटी चम्मच तेल

नमक स्वादानुसार या आधी छोटी चम्मच

तेल तलने के लिए

:निर्देशानुसार बनाएं

1. सबसे पहले हम एक बड़े कटोरे में सभी आवश्यक सामग्री को मिला लेंगे. उसके बाद इस मिश्रण को थोड़े थोड़े पानी की सहायता से मिलाएंगे.

2. ध्यान रहे की पानी का प्रयोग इतना ही करना है जिससे मसाला मूँगफली के ऊपर समानरूप से चिपक जाए.

3. अब किसी पैन या कढ़ाई में मध्यम आंच पर तेल गरम करें

4. इसमें मूँगफली को सुनहरी होने तक तलें.

5. जब मूँगफली तल कर तैयार हो जाएं उन्हें तेल से बाहर निकाल कर किसी तेल सोखने वाले पेपर पर रखें.

6. इस वक़्त मूँगफली ज्यादा क्रिस्पी नहीं होंगी, जब मूँगफली ठंडी होकर कमरे के तापमान जितनी हो जाएंगी तब वह ज्यादा कुरकुरी हो जाएंगी.

7. क्रिस्पी मसाला मूँगफली तैयार है. इन पर चाट मसाला छिड़क कर गरम चाय के साथ परोसें.

Bruschetta is a simple and tasty Italian appetizer.This little dish is so easy and mouthwatering. Bruschetta in Italian means toasted bread with topping. This is perfect starter for parties.

Ingredients

1 loaf baguette
8 cherry tomatoes
4 medium tomatoes(chopped)
7 to 8 leaves of fresh basil (chopped)
4 to 8 leaves rosemary herb
1 tsp olive oil
2 cucumber (chopped)
Salt to taste
Black pepper powder to taste

Instructions

1. In a bowl mix tomatoes, cucumber, basil, rosemary ,olive oil, salt, pepper and mix well (taking care not to mash or break up the tomatoes too much.

2. Cover and refrigerate for 20 minutes.

3. Slice the baguette loaf diagonally, into thick slices and lightly toast the slices until they are
Lighy brown on both sides.

4. Now serve the mixture on the warm slices of bread and enjoy…

आवश्यक सामग्री

1 बगैट ब्रेड ( जो फ्रेंच लोफ की तरह होती है)
8 चेरी टमाटर
4 मीडियम आकार के टमाटर (बारीक़ कटे हुए)
7 से 8 बेसिल की पत्तीया (बारीक़ काटी हुई)
4 से 8 पत्ती रोज़मैरी हर्ब
1 छोटी चम्मच जैतून का तेल
2 खीरे ( बारीक़ कटे हुए)
नमक स्वादानुसार
काली मिर्च पाउडर स्वादानुसार

निर्देशानुसार बनाएं

1. एक कटोरा लें उसमे टमाटर, खीरा, बेसिल, रोज़मैंरी, जैतून का तेल,नमक,काली मिर्च डालकर अच्छी तरह मिला लें (लेकिन ये मिक्सचर चिपचिपा नहीं होना चाहिए और टमाटर के टुकड़े पिसने नहीं चाहिए).

2. इस मिश्रण को ढककर 20 के लिए मिनट फ्रिज में रख दें.

3. बगैट ब्रेड को तिरछे मोटे स्लाइस में काट लें और सभी स्लाइसेस को ब्रेड की दोनों और से हल्का सुनहरी होने तक सेक लें

4. अब इन गरम ब्रेड स्लाइसेस के ऊपर तैयार किया गया मिश्रण रखें….और इनका आनंद लें!!
