Pudina Rice (Mint flavoured Rice)


Pudina/Mint is a popular ingredient in several foods and beverages, there is no denying that mint tastes good and healthy too, whether you use it in juice, food, candy, toothpaste or something else.

During summer mint leaves are widely used in several things because of its coolant act, So in these hot days, my kitchen is also good fragrance with fresh mint leaves and by having inspiration from lots of recipes, i am also using mint in my recipe as well.

Its mint flavored rice, a super tasty and easy recipe. During summers you can have this dish in lunch or dinner as per your choice. You can also add mixed veggies to make this dish more flavorful and healthy too. So lets begin to prepare this flavourful recipe now…

Ingredients

1 medium bowl cooked rice
1 onion (finely chopped)
1 green chillies (finely chopped)
1 table spoon lemon juice
1 table spoon clarified butter or cooking oil
1/2 small bowl mixed vegetables (frozen)
1/2 tea spoon cumin seeds
2 pieces of green cardamom
1 piece star anise
2 cloves
1 small piece of cinnamon
1 tea spoon coriander powder
Salt to taste
2 table spoon water
1 small bowl mint paste

Ingredients for mint paste

1 cup mint leaves
2 green chillies
1 inch ginger piece
1 tea spoon lemon juice
1/3 tea spoon black salt
Pinch of asafoetida
Ground all mint paste ingredients together and convert them into paste.

1. Firstly we need to heat a pan on medium flame and add cumin seeds and whole spices in it.

2. When the whole spices turns slightly brown, add onion in it and saute until it also becomes light brown in color.

3. Now add frozen mixed vegetables in it and saute them for about 1 to 2 minutes.

4. Now add all spices and salt in it and saute about a minute.

5. Now add mint paste in it and let it cook on slow flame about 2 to 3 minutes, then add rice and 2 tablespoon of water in it and mix all gently with light hands.

5. On low flame, cover this pan with a lid and let it simmer for a minute and then turn off the flame.

6. Add 1 table spoon lemon juice in it and mix gently without mashing the rice.

7. Now super tempting Pudina Rice is ready to be served… this rice is best served with plain yogurt or laban!

Blue Fruit Punch/ Hawaiian Punch (Mocktail)


There are multiple ways of making blue fruit puch drink and this is one of best and super quick way to prepare hawaiian drink.

1 can sprite
2 tablespoon hawaiian punch/blue fruit punch
1 table spoon lime juice
4 to 5 frozen blueberries

Instructions

1. For this refreshing drink, we need to take two tall glasses and now add equal amount of blue fruit punch, lime juice and sprite in both glasses.

2. Now slightly stir together and then add frozen blueberries and some ice cubes in this drink and serve immediately.

Ingredients

2 cups bite sized fruit pieces or thin sliced
1/3 tea spoon black salt
1/3 tea spoon chat masala
1 table spoon lime juice
Some fresh mint leaves

Instructions

1. Add all fruits, spices, lime juice and mint leaves together in a large bowl.

2. Gently toss with a spatula then let sit in the refrigerator for at least 10 minutes or serve immediately if using bananas and garnish with fresh mint leaves.

Lassi is a very healthy, digestive and refreshing, North Indian drink to have in the summers. Normal and easiest version always is the plain one but hard to maintain the consistency of taste and that is how flavored lassi came into the picture.

Kids are always into some specific flavors which are working in all categories like Chocolate, Mango, Vanilla etc but Mango is the favorite option during summer. Mango lassi is not best just because of its taste but best for health also as it contains lot of healthy fats and Vitamins as well. So this mango lassi is a perfect combo of health pack. The best time to drink this lassi is breakfast time or it is best option during fast because it keeps your body energetic full of day.

Ingredients
1 cup fresh plain yogurt (chilled)
1/2 cup milk (chilled)
350 gram chopped ripe mango
2 tablespoons sugar

1. To prepare mango lassi, add all ingredients together in a blender jar.

2. Blend this mixture for about one to two minutes or puree until smooth..

There are many ways to prepare Mango Ice-Cream and i am sharing here the easiest one.
Its a basic recipe but smile and excitement on kids face going to tell you all about the worth of that basic flavour. You can serve this creamy mango ice cream plain or you can top it with some chopped dry fruits. I am using pistachios, mint leaves and honey to garnish it.

So lets begin to prepare easy creamy Mango ice cream.

Ingredients

200 ml low fat whipped cream
80 gm condensed milk
1 cup fresh ripe mango puree

Instructions

1. To prepare Mango ice-cream, firstly we need to whip the cream. For whipping we need chilled bowl and chilled beater before beating the cream. Then start beating the cream until it turns fluffy.

2. Now add condensed milk and mix well.

3. Now take a container or box and add this mixture in it, then add mango puree in it and again mix it well (for dark colour, you can use yellow food color). cover and keep it into the freezer at least for 4 to 5 hours.

4. Once frozen, take a ice-cream cup or any server, scoop the ice-cream and garnish it as your choice or serve as it is… Enjoy😊

Creamy Mango Oreo Ice-Cream


So here is the most loving summer recipe of the year i.e. Creamy Mango Oreo Ice Cream. There are many ways to prepare mix ice cream and just to make the best, i am using most demanding flavors together which are liked by all age groups.

I am sure that even ‘specific flavor lovers’ going to love that one. The way famous brand chocolate brands are selling more of their ice creams during summer, so above combination is dreamy summer treat. Smile and excitement on your kids face going to tell you all about the worth of that flavor.

So lets begin to prepare easy creamy Mango and Oreo Ice Cream now.

Ingredients
150 gm condensed milk.
1 cup fresh mango puree.
300 ml low fat whipped cream.
1/2 cup crushed chocolatey oreo sandwich cookies.

Instructions

1. To prepare this ice cream, first of all we need to whip the cream. For this we need chilled bowl and chilled beaters before beating the cream. Then start beating the cream until it turn fluffy.

2. Now add condensed milk and mix well.

3. Now take two containers and divide mixture into two equal parts.

4. Take a container and add mango puree in it and mix it well (for dark color, you can use yellow food color) cover and keep it into the freezer at least 4 hours minimum.

5. Now take another container and add crushed oreo cookies in it and mix them well, then cover and keep it into the freezer for same timings.

6. Once frozen , take a ice-cream cup or any server, scoop the both ice-creams and garish it as your choice or serve as it is….Enjoy!!😊

Healthy Coconut Popsicles


Only 3 ingredients (except water)

Coconut milk is a good source of several vitamins and minerals.

It can improve the health of the digestive system and promote digestion. Coconut milk can be used in a variety of recipes and today i am going to share one of them. It is coconut milk Popsicles, this is very easy recipe and very healthy for kids and all other ages.

In this recipe we will make coconut Popsicle with fresh coconut milk and some other ingredients.

Ingredients

1 fresh coconut
1/2 cup condensed milk
1 tea spoon custard powder

Instructions

1. To prepare healthy coconut Popsicle, first of all crack coconut shell and remove coconut from it.

2. Now cut the coconut in small chunks or you can grate them.

3. Now add 1 cup of water and coconut chunks in blender and grind them very well.

4. Strain this mixture into muslin cloth and squeez out all the coconut milk from the muslin cloth.

5. Now coconut milk is ready, pour this milk in a sauce pan add condensed milk, 1 tea spoon custard powder in it and mix well.

6. After mixing, boil this mixture and set aside to cool.

7. Pour this mixture evenly into the popsicle moulds and keep it into the freezer at least 3.5 hours or overnight.

To easily remove the ice pops, run under water to help loosen from the mould.

Then serve and enjoy!!

I like Coconut flakes in my coconut Popsicles so i add 2 tea spoon coconut flakes in it.
