Mamool/Maamoul


Mamool is a traditional Middle Eastern cookies recipe.

They are semolina based cookies that have three traditional fillings including pistachio, walnut and most demanding dates filling. Traditionally Mamool is formed in a specific design mold but you can also make them with your hands as well.


Likewise other cookies, Mamool is also a baked recipe, after baking, you need to make them cool and coat them with powdered sugar.

Although it is a festive recipe, especially in arab countries people eat them at night during Ramadan and eid, and easter sunday but you can prepare it at home anytime when your sweet tooth craving to have some sweets.

Ingredients

For cookies dough

300 gram semolina
100 gram powdered sugar
1/3 cup milk powder
80 gram all purpose flour
80 gram butter or ghee
1 table spoon cooking oil
1 tea spoon vanilla essence
1 table spoon rose water
1/3 tea spoon nutmeg powder
1/3 tea spoon baking powder
Pinch of salt
Luke warm milk as needed

For Fillings

200 gram dates
80 gram of minced pistachios
80 gram of minced walnut
1 tea spoon green cardamom powder
4 table spoon sugar
2 table spoon water

For yeast mixture

1/2 tea spoon yeast

1/2 tea spoon sugar
3 table spoon water

Instructions

1. To prepare Mamool, first of all we need to take a big bowl and add semolina in it.

2. Now add the melted butter or ghee and oil in it and softly rub the butter and oil into the semolina mixture.

3. Now cover this mixture with cling wrap and leave it for couple of hours.

4. Now add dry ingredients in this mixture like milk powder, powdered sugar, salt, baking powder, nutmeg powder, all purpose flour and mix them well together.

5. Now prepare yeast mixture, take bowl add 3 table spoon water, yeast and sugar in it and set aside until the surface of this mixture becomes foamy.

6. Its time to add wet ingredients into dry ingredients, add rose water, yeast mixture, vanilla essense in to the semolina mixture and with the help of milk knead a soft dough.

7. Cover this mixture atleast for 1 hour.

8. We will use this gap to prepare filling,

For dates filling, firstly remove seed from all dates and grind them until they turn into a paste. You can use this paste as it is, but to make it more flavourful, add some mix nuts in it.

9. For pistachios filling take a bowl add minced pistachios in it and then add cardamom powder, 1.5 table spoon water and sugar in it and mix well together.

10. For walnut filling

Take a bowl add minced walnut in it and then sugar, 1.5 table spoon water then mix them all well together.

11. To make the mamool we use a plastic mold, traditionally there is different kinds of molds for each filling. But you can also prepare them without using any mold or anything.

12. Now take a lemon size ball from the dough and give it to the smooth round shape. Put it in the center of your palm and press slightly.

13. Now add the 1 tea spoon of filling in the center of this flat dough ball. And then fold it up again to give it a ball shape again.(meanwhile preheat the oven )

14. Now put the stuffed ball in the proper mold and press slightly to give it the shape.(like wise prepare all Mamool with all three fillings).

15. Put the prepared Mamool in the cooking tray and bake them on 230℃ until they get colored or for about 15 minutes.

After you bake them, coat them with powder sugar and serve with Kahwa or tea or coffee as your choice..

Note- if you are not having Mamool mold, to give it proper shape, no need to worry, you can decorate the stuffed ball with fork or knife or anything, because it is just a creativity.

Bengali desserts are very popular in all over India and even in some other well known countries as well. The reason behind it, its unique taste and look. Sandesh is a speciality of Kolkata(Bengal).

In Bengal, sandesh is a speciality to serve as a dessert. You can get this sweet easily in any restaurant or hotel anytime, but the occasion when it become an speciality is Durga Pooja. There are many variations of prepare this recipe like almond sandesh, cashew sandesh and all flavors, but today i am gonna share a very simple and basic recipe of sandesh.


Preparation of sandesh is very simple, we need just few ingredients like fresh cottage cheese, sugar and green cardamom … So lets celebrate Durga pooja with this authentic bengoli/bangali sweet.

Ingredients

1.5 liter milk
2 table spoon lime juice
1/3 cup powdered sugar
4 green cardamom (crushed)
Pistachios for garnish (optional)

Instructions

1. To prepare this recipe first boil the milk on high heat in a thick bottomed pan.

2. As soon as milk starts boiling turn off the heat and then add lime juice in it. Keep on stirring the milk very slowly with a spoon.

3. In about 2-3 minutes complete whey will be seprated from paneer, pour the curdled milk into pan or bowl lined with a thin cotton napkin.

4. Once you are done adding all the curdle milk then bring together the edges of the cotton napkin and gently squeeze out the remaining whey from it.

5. Rinse the collected bundle of paneer/chhena in water this will get rid of the after taste of lime juice.

6. Now take a pan and add this paneer/chhena in it.

7. Now add powered sugar, crushed cardamom in it, and cook it on medium flame for about 4 to 5 minutes.

8. Then remove the pan from the heat and devide this mixture into 11 equal parts or equal small balls.

9. Now give them simple round shape or your desire shape.

Refrigerate them for about 30 minutes then serve and enjoy 😊!

Coriander Nuts Modak

Coriander Nuts modak is one of the many varieties of modak. It is an easy and healthy modak recipe that can be made for Ganesh Utsav.

There are many varieties and flavors of modak like kesar modak, chocolate modak and ukadiche modak. Today i am going to share coriander nuts modak. Recipe is very simple which contains roasted coriander powder, khoa, powder sugar and nuts.

Ingredients

3 table spoon coriander powder

250 gms khoa/ mawa /dried milk

1/2 cup ripe coconut(shredded)

1/2 cup powder sugar

1/2 cup clarified butter(pure ghee)

1/2 cup makhane (fox nut)

15 almond (sliced)

15 cashew (sliced)

15 pistachios (sliced)

1 table spoon chironji

1/4 tea spoon carom seeds

1 table spoon melon seeds

1 table spoon chironji

Instructions

 

1. To prepare this recipe first of all, take a thick bottom pan and heat 1 table spoon ghee in it.

2. Now saute the shredded coconut on low heat about 2 to 3 minutes then take them out and keep aside.

3. In the same pan add 1 table spoon ghee on medium flame and roast the fox nuts/makhane until they become crunchy, then remove from the pan and keep aside.

4. In the same pan add 1 tea spoon ghee and likewise prepare all nuts and keep aside.

5. In the same pan add 1/2 tea spoon of ghee and khoa together and saute them about 2 to 3 minutes.

6. Now add the remaining ghee and roast dhaniya powder until it becomes light brown in color.

7. Now add carom seeds in coriander mixture. 

8. Now mix all roasted nuts, powder sugar, roasted dhaniya powder, khoa together and mix it well.

9. Now add enough of the coriander nuts mixture into modak mould, press for few seconds and release the mould and likewise prepare all modaks.

Now coriander nuts modaks are ready to be served!😊

Kaju katli or kaju barfi is a well known sweet in all over India, but it is extremely popular in north India. Kaju katli is a most demanding sweet during festivals like Diwali , Rakshabadhan. This delicious dessert recipe not only has awsome taste, but even easy to make also.

To prepare this sweet you need only three ingredients kaju, sugar and water. In Traditional way Kaju katli is garnished with silver vark, but this is not a compulsory ingredient, especially when you are preparing it at home.

So make your Rakshabadhan more special with these delicious Kaju Katli.

Ingredients

300 gram Kaju
1/2 cup + 2 table spoon sugar
1/4 cup water
1/2 tea spoon clarified butter for greasing the plate.
Silver vark (varak) optional

Instructions

1. To prepare kaju katli first of all you need to grind cashew like powder.

2. Now sieve this powder and set aside.

3. Take a non stick pan and add sugar and water in it.

4. Boil this mixture until sugar get dissolved in it.

5. Now add powdered cashew in it.

6. Cook it 5 to 6 minutes on low flame and stir continuously.

7. Meanwhile grease a plate.

8. When cashew mixture start to leave the pan, transfer it in to the greased plate and let it cool for 15 minutes.

9. Now take a butter paper and grease it.

10. Now place the kaju dough over the butter paper and fold the paper like, butter paper should be on top and bottom.

11. Now roll it to 1/4 inch thickness, remove the butter paper on top.

12. At this time apply the silver vark on that.

13. Set aside for about 30 minutes. Now cut into your desire shapes.

Cookies And Cream Dessert


Whipped cream is a multi purpose ingredient, you can use it in multiple ways and today i am going to share a new way to use whip cream throughout this yummiest Cream & Cookies dessert.

This is a chilled creamy layered dessert with crunchy cookie crumbs. Its not only the quickest recipe but easy as well and you will find its worth more than the time and efforts you will spend on it. Your kids going to love it and going to be more demanding during this summer, moreover you can make it more tasty by using your favorite chocolates in it.

So lets get start to prepare this yummy cookies and cream dessert today.

Ingredients

200 ml whipping cream

1 table spoon icing sugar

2 table spoon hazelnut spread

1 tea spoon vanilla essence

10 oreo chocolate sandwich cookies

Instructions

1. To prepare this recipe first of we need to whip the cream.

2. Take a bowl and add whipping cream in it and whip it until it becomes thick in consistency, then add vanilla essence and icing sugar in it,  mix well.

3. Now divide this cream into two equal portions.

4. Take one portion and add hazelnut spread in it and mix well.

5. Now coarsely crush the oreo cookies.

6. Now take small glasses and set them all three layer by layer – first hazelnut flavored whip cream then cookie crumbs over them and then simple sweet whip cream, likewise prepare all glasses and garnish them with your favorite chocolate.

Shahi Kheer/Paneer Payasam/Paneer ki kheer


Basically Paneer kheer is a Bengali dessert, It is also known as chenna kheer in Bengal.

As per reviews that we had, it is not only the super mouth watering dessert of India but even outside India too. You can prepare this kheer on any special occasion and for sure that new dessert will add lot of value in taste.

This is one of the easy recipe but yes little bit of time consuming as well but for sure its taste worth the time we arranging it.

Paneer kheer is purely milk based recipe. I am using home made paneer but for easier use, you can get it from outside… So lets get started to make this delicious dessert.

Ingredients

1 liter full cream milk.
250 gram cottage cheese (grated).
1/2 cup sugar.
50 gram pistachios (chopped)
50 gram cashews (chopped)
1 pinch saffron
1/2 tea spoon green cardamom powder

Instructions

1. To prepare paneer kheer first of all we need to heat the milk in a thick bottom pan.

2. Boil the milk and then let it simmer utill it becomes thicker in consistency.

3. Once milk has thickened, add paneer, cardamom powder, saffron, sugar and chopped dry fruits in it.

4. Cook this mixture on low heat for about 3 to 4 minutes.

5. Now remove it from the flame and garnish with dry fruits and saffron.

I love chilled kheer but you can serve as your choice warm or cold!

Wheat Flour Chocolate Brownie(Eggless)


On the special Occasion of “Mothers Day” today i am gonna share a sweet recipe which is my all time favorite and it is as sweet as moms love.

I am dessert lover and brownies are my all time favorite. Some people like fudge brownies but i like cakey and more chocolatey.

Brownies are one of American best culinary invention. To make it more healthier i am using wheat flour instead of all purpose flour. You can prepare it in Microwave and cooker also but i am going to a share oven method.

Ingredients

1.5 cup wheat flour
85 gms butter
100 gms dark chocolate
3.5 table spoon Cocoa powder
1/2 cup + 2 table spoon sugar
1 tsp vanilla essence
1 tsp baking powder
1/2 tsp baking soda
2 table spoon yogurt
1/4 cup milk(luke warm)
1/2 cup chopped walnuts
1/4 cup chopped almonds
Instructions

1. To prepare Wheat flour eggless chocolate brownie we need to preheat the oven at 180℃.

2. Now mix the dry ingredients together in a big bowl – wheat flour, cocoa powder, baking soda, baking powder.

3. Now sift the mixture 2 times and set aside.

4. Now take a big bowl, add chocolate and butter together and melt it in the Microwave (at medium temp for 1.5 mins) or double boiler. Meanwhile grease the baking tin.

5. Now take it out and mix well, after mixing add sugar, vanilla, whisked yogurt and nuts together and mix it very well.

6. Now add wheat flour mixture in it and mix well, pour this mixture into the greased tin, tap it 2 to 3 times, sprinkle  some crushed chocolate and walnut over it and then bake it in preheated oven for about 25 to 30 minutes.

 

7. When it is cool completely, cut into squares shape and serve with hot tea and enjoy it with your mamma… Happy Mothers Day!!
