Healthy Vegetable Poha


Poha or Rice flakes are very good source of instant energy. It is very light and easy to digest, not only these benefits, even it is a good source of vital minerals, vitamins and iron too.


You can have it in different forms like fried, with milk, with yogurt and plain as well.

Poha is perfect for breakfast but you can have this as a snack too and replace unhealthy snacks with that like, chips and junk food. We all are very well aware about that it is light, healthy and good for diabetic patient as well, but once we add mix vegetables in it, they gives us additional benefits with yummy taste. It is easy to make recipe so lets prepare this healthy meal today.

Ingredients
1 cup poha/ flatten rice/rice flakes.
2 table spoon peanuts (dry roasted)
1 table spoon clarified butter
1/2 tea spoon mustard seeds
1/3 tea spoon cumin seeds
6 to 7 curry leaves
1 lime
1 cup finely chopped mixed vegetables ( i used carrot, cabbage, green peas, capsicum)
2 Green chillies (chopped)
1 Onion (finely chopped)
1/2 tea spoon turmeric
50 gram fresh coriander (finely chopped)
2 table spoon fresh pomegranate seeds for garnishing
Salt to taste

Instructions

1. To prepare healthy vegetable poha firstly we need to wash the poha and drain the water completely, and then keep it aside.

2. Take a pan and heat clarified butter in it. Add mustard seeds, cumin seeds and once they start to splutter add onion and curry leaves in it.

3. After 2 to 3 minutes add mixed vegetables in it. Saute them until they become soft.

4. Now add green chillies, salt turmeric and then cover the pan with lid and cook it for 2 to 3 minutes on low heat.

5. Now add poha and mix it very well, then add roasted peanuts and lime juice and mix well.

6. Now turn off the flame and garnish it with fresh pomegranate seeds and fresh coriander leaves.


Now the yummy healthy poha is ready to serve.
Serve hot with plain yogurt or anything as per your choice.😊 Enjoy!!

Its Avocado Moong Sprouts sandwich.
Sandwiches has endless varieties but this is very healthy and perfect for our internal system, means improving our overall health and keeping the internal system in perfect condition. So lets prepare this healthy sandwich today!

Ingredients

2 Bread slices(white or brown)
1 Avocado (peeled and sliced)
1Table spoon moong sprouts.
2 tea spoon cheese spread or cream cheese(low fat)
5 to 6 cucumber slices
5 to 6 carrot slices
3 to 4 leaves lettuce
3 to 4 slices of tomato
2 pinch Black pepper powder
1/8 tea spoon of black salt

Instructions

1. To prepare this sandwich first you need to apply cheese spread to one side of both breads.

2. Place carrot slices, cucumber slices, lettuce,tomato slices , sprouts moong, now sprinkle some pepper and salt.

3. Now place avocado slices, tomato slices and again sprinkle some salt and black pepper powder, cover with another  bread slice and press lightly.

Farfalle Pasta With Spicy Jalfrezi


Farfalle Pasta With Spicy Jalfrezi

The combination of Farfalle pasta and Jalfrezi is so tasteful and we can prepare it easily.Though Jalfrezi is not a new thing for food lovers but adding it with Pasta is quite unique and so delicious and i am very much sure that all health conscious people going to like it.

Its perfect for all age groups but it can be so beneficial for all moms whose kids prefer to have pastas but not vegetables. By this moms can make it possible for kids to eat all vegetable along with pasta.

Only we need to keep all ingredients ready. Probably the most time consuming activity in preparing this recipe is to chop the vegetables so have patience as vegetables are the healthy part. So lets begin to prepare yummy Farfalle with Spicy jalfrezi…

Ingredients
1 cup farfalle pasta
2 cups of chopped vegetables (carrot, baby corn, colored capsicum, beans, cauliflower, etc)
1/2 Cup of onions, sliced
1/2 Teaspoon cumin seeds
2 Tablespoon of oil
1 Teaspoon of coriander powder
1/2 Teaspoon of red chilli powder (adjust to taste)
1/4 Teaspoon of black pepper powder
1.5 Tablespoon of tomato paste
1/2 Teaspoon of garam masala
3 to 4 whole red chillies

Salt as per taste
INSTRUCTIONS

1. To prepare jalfrezi pasta first of all prepare vegetables by washing, peeling, and chopping them.

 

2. Heat 3.5 cup of water in a big sauce pan and boil pasta Farfalle for about 8 to 10 minutes or until tender, stir occasionally. Drain and set aside.

3. Now heat oil in a pan and add the cumin seeds and whole red chillies. When they sizzle and turn darker brown, add the sliced onions.

4. Saute until the onions turn soft and a light golden brown. Then add all chopped vegetables and spices in it. Cook for 2 to 3 minutes.

5.Now add the tomato paste and mix well.

6.Top up with half cup of water and bring it to boiling level. Lower the flame and cover the pan until vegetables are cooked.

7.Take care and not to overcook them, the water should be lesser by now but if you find the gravy still watery, cook a bit longer leaving the pan open.

8.When the vegetables are cooked and the dish has the desired consistency, add Farfalle pasta, garam masala. Mix well and turn off the heat.

 

9.Now spicy farfalle is ready to be serve… Serve this with Your favorite sauce or as it is… Enjoy!!

Curd Rice with Mint Flavor


  1. Curd and Rice both are very healthy ingredients to make any dish. The combination of both means taste, health and perfect option for a healthy meal. Yes today i am going to share an easy and super delicious recipe of Curd rice with mint flavor. This is one of the quick and easy recipe. Though Curd rice is a popular south indian dish but people like it in all over india because of its taste.

This recipe needs only few easily available ingredients. There are many ways to make curd rice, somewhere people add mix salad veggies in it, and somewhere they use fruits but both options are good so you can add fruits and veggies according to Your comfort. I used fresh mint leaves to gives it a fresh and different flavor. This recipe is perfect option for kids lunch box too. Hope you will like it.

1/2 cup raw white rice

1 cup yogurt/curd

20 mint leaves

1 teaspoon cooking oil

1/4 cup milk

1 inch ginger piece(finely chopped)

1 carrot (small) grated

Fresh coriander leaves (finely chopped)

Salt to taste

For Tempering

1 teaspoon mustard seeds

1 green chilli (chopped)

Pinch of Asafoetida/hing

8 curry leaves (fresh or dry)

Instructions

1. To prepare curd rice with mint flavor, first we need to wash and soak rice for 15 minutes.

2. Now take a deep pan or rice cooker, add 1 and 1/4 cups of water, soaked rice, mint leaves and pinch of salt in it. Cook the rice until they become very soft.

3. Now whisk the curd without adding water because this recipe required thick consistency of yogurt.

4. Mash the rice lightly and when rice cool completely, add whisked yogurt and Milk in it.

5. For Tempering – heat oil in a small pan, add mustard in hot oil, let it splutter. Then add fresh mint leaves, carrot,coriander leaves, curry leaves and salt.

6. Now pour seasoning and mix well, then keep them into refrigerator for about 30 minutes.

After 30 minutes Garnish them with Pomegranate seeds and mint leaves. Then mint flavor Curd rice is ready to serve…..Enjoy!!😊

Note

If you are using fresh yogurt/curd that time you can avoid adding milk.

When you ‘ll add curd and rice together, make sure rice should be cool.

For some spicy flavor you can also add little bit black pepper powder in it.

Rava Upma is a healthy, tasty and colorful dish. It is equally great for breakfast or snack. It is nutritious, tasty and very easy to make at home. In this recipe roasted rava or semolina cooked with sauted mix vegetables. And the ingredients making it traditional are curry leaves, peanuts and split lentil. So lets start to make our yummy breakfast upma in South Indian style.

1 Cup semolina(Rava/sooji).

1/2 Tsp mustard seeds.

1.5  Tbls spoon clarified butter(desi ghee) or cooking oil.

2 Tbl spoon peanuts.

1/2  Tsp cumin seeds (Optional)

1 Medium onion (Chopped)

1 Tsp grated ginger

1 Pinch asafoetida (hing)

1 Tsp split urad daal (washed)

2 Green chillies (chopped)

8 to10 Curry leaves

2 Tblsp chopped carrot

2 Tbsp chopped capsicum

1 Medium tomato chopped

2 Tblsp frozen peas

1 Tsp chopped fresh coriander

1 Tbsp sweet corn (optional)

1.5 Tsp lime juice

Salt as per taste.

Pinch of red chilli  powder

(optional)

Pinch of coriander powder (optional)

1. Heat non stick pan and dry roast the semolina in it until it turns  light brown in color. Then turn off the heat and take it out in a bowl.

2. Now in the same pan add 1 tsp clarified butter and peanuts, roast them until they becomes crunchy and then take them out in a bowl.

3. Heat clarified butter or cooking oil in a non stick pan and add mustard seeds in it.

4. When mustard starts crackling then add cumin and urad daal in it.

5. Saute them until they become light brown in color.

6. Now add onion and saute until it become transparent.

7. Add curry leaves, green chilli, ginger and half quantity of peanuts and saute them for a minute.

8. Now add tomato and cook them about 2 to 3 minutes. Then add all chopped vegetables, peas, corn and spices in it, mix well cover and cook them about 3 to 4 minutes.

9. After that add semolina mix it well and add 3 cups of water.

10. Stir continuously on low heat, after 2 or 3 minutes add remaining peanuts then cover and cook until semolina cook properly and then add lime juice mix well. Now Traditional Rawa Upma is ready…before serving sprinkle  some fresh coriander leaves, peanuts and pomegranate seeds on it…. Enjoy😊!!

Today i am going to share my all time favorite recipe, Vegetable Sandwich… Whenever i feel that i am in need of taste, nutritions and quick one, i prefer to go only for sandwiches 😊. Sandwiches has endless varieties but this is very simple and basic recipe. In this recipe i used healthy vegetables. The health benefits of vegetables usually show in long run by improving your overall health and keeping the internal systems in perfect condition. So this is the easy and tasty way of eating vegetables daily. And also perfect meal for kids lunch box. So lets prepare this easy sandwich with Roop…😊

Ingredients

1 cup all purpose flour

2 tbsp cooking oil

1 tsp instant dry active yeast

1/4 tsp salt

1tsp sugar

Luke warm water as needed

 

*For stuffing*

1 potato (boiled & grated)

1/4 cup frozen corn

1 small carrot (finely chopped)

1 tbsp frozen green peas

1 green chilli (finely chopped)

1 small capsicum (finely chopped)

1/2 tsp chopped fresh coriander leaves

1 tsp kasoori methi

1/4 tsp garam masala

1/4 tsp chat masala

2 tbsp canola oil

1/4 tsp red chilli powder

1/4 chaat masala

Pinch of black pepper

1/2 tsp coriander powder

Pinch of asafetida

1 tbsp butter

1 tsp white sesame seeds.

Instructions


 

1. Take a big bowl and add all purpose flour, Instant active yeast,salt,sugar and 1 tbsb oil in it.

2. Now knead a dough with the help of luke warm water. Knead it until it become soft and smooth.

3. Now apply some oil over the dough and keep aside for 1.5 hrs, at warm place like a turned off microwave or oven.

4. Meanwhile we prepare stuffing.

*For the stuffing*


1. Heat 1 tsp oil in a pan over medium flame, once hot add the cumin seeds, kasoori methi and Asafoetida.

2. Add all chopped vegetables and spices. Mix them very well together and cook for 4 or 5 minutes then switch off the flame.

3. Now take dough and divide into 6 equal portions.

4. Take one dough ball and flatten it with the help of your thumb and finger.

5. Now place 1 tbsp stuffing on it and bring the edges of dough together and press to seal then roll back in round shape and place on a greased baking tray.  Similarly prepare the rest as well.

6. Cover the buns with cotton napkin and keep aside for 30 minutes at warm place.

7. After 30 minutes buns will puff up double in size and now apply some melted butter on buns, sprinkle some sesame seed over them and then  bake them in preheated oven at 200℃ for about 12 to 15 minutes.

8. Bake them until they turn in golden brown in color.The Mix Veg stuffed buns are ready to serve…..Enjoy with tomato sauce or any other flavor of sauce😊

*वेजिटेबल स्टफ्ड बन*


 

आवश्यक सामग्री

1 कप मैदा

2 बड़ी चम्मच तेल

1 छोटी चम्मच इंस्टेंट ईस्ट

1/4 छोटी चम्मच नमक

1 छोटी चम्मच चीनी

हल्का गरम पानी आवश्यकतानुसार.

*स्टफिंग के लिए आवश्यक सामग्री*

1 आलू (उबला ,छिला व् कसा हुआ)

1/4 कप फ्रोज़न मक्का के दाने

1 छोटी गाजर (छील कर बारीक़ कटी हुई)

1 बड़ी चम्मच फ्रोज़न मटर

1 हरी मिर्च बारीक़ कटी हुई

1 छोटी शिमला मिर्च (बारीक़ काटी हुई)

1/2 चम्मच बारीक़ कटा हुआ हरा धनिया

1 छोटी चम्मच कसूरी मेथी

1/4 चम्मच गरम मसाला

1/4 चम्मच चाट मसाला

2 बड़ी चम्मच कैनोला तेल

1/4 चम्मच लाल मिर्च पाउडर

1 पिंच काली मिर्च

1 पिंच हींग

1 बड़ी चम्मच बटर

1 छोटी चम्मच सफ़ेद तिल

नमक स्वादानुसार

 

*निर्देशानुसार बनाएं*


 

1. एक बड़े कटोरे में मैदा, ड्राई एक्टिव ईस्ट, नमक, चीनी और 1 बड़ी चम्मच तेल डाले और हल्के गरम पानी की सहायता से मुलायम आटा गूथ कर तैयार कर लें.

2. अब आटे के ऊपर थोड़ा सा तेल लगाकर, आटे को 1.30 घंटे किसी गरम स्थान पर रख दें जैसे की स्विच ऑफ किये हुए ओवन या माइक्रोवेव में.

3. इस दौरान हम बन के अंदर भरने वाली फिलिंग को तैयार करेंगे.

*स्टफ्फिंग तैयार करने की विधि*


 

1. पैन में एक छोटी चम्मच तेल गरम करें, अब इसमें जीरा, कसूरी मेथी और हींग डालें.

2. अब काटी गई सभी सब्जियां और मसाले डालकर अच्छी तरह मिलाएं और इन सब्जियों को 4 से 5 मिनट तक ऐसे ही पकाएं और उसके बाद गैस बंद कर दें.

3. अब आटा लें और उसे 6 बराबर भागो में बाँट लें

4. आटे का एक भाग उठाए और अपनी उंगलियों व् अंगूठो की सहायता से इसे अपनी हथेली पर गोल आकार में समतल बना लें(जैसा की तस्वीरो में दर्शाया गया है)

5. अब इसके केंद्र में 1 बड़ी चम्मच तैयार की गयी स्टफ्फिंग रखें, और सभी किनारो को आपस में मिलाकर बंद करके गोल आकृति दें. तैयार किये बन को ग्रीस की गई बेकिंग ट्रे में रखें और बाकि बन को भी ऐसे ही तैयार करें.

6. अब तैयार किए गए बन को किसी सूती कपडे से ढककर 30 मिनट के लिए किसी गरम स्थान पर रख दें.

7. 30 मिनट के बाद बन फूलकर तैयार हो जायेंगे अब इनके ऊपर पिघला हुआ मक्खन लगाएं और सफ़ेद तिल छिड़के. इसके बाद बन को 200℃ पर 12 से 15 मिनट के लिए बेक करें.

8. बन को सुनहरी होने तक बेक करें. अब स्वादिष्ट मिक्स वेज स्टफ्फड़ बन तैयार हैं….आप इन्हें टोमेटो केचप के साथ या अपनी पसंद की किसी भी चटनी के साथ परोसें और आनंद लें…😊
