Kaju katli or kaju barfi is a well known sweet in all over India, but it is extremely popular in north India. Kaju katli is a most demanding sweet during festivals like Diwali , Rakshabadhan. This delicious dessert recipe not only has awsome taste, but even easy to make also.

To prepare this sweet you need only three ingredients kaju, sugar and water. In Traditional way Kaju katli is garnished with silver vark, but this is not a compulsory ingredient, especially when you are preparing it at home.

So make your Rakshabadhan more special with these delicious Kaju Katli.

Ingredients

300 gram Kaju
1/2 cup + 2 table spoon sugar
1/4 cup water
1/2 tea spoon clarified butter for greasing the plate.
Silver vark (varak) optional

Instructions

1. To prepare kaju katli first of all you need to grind cashew like powder.

2. Now sieve this powder and set aside.

3. Take a non stick pan and add sugar and water in it.

4. Boil this mixture until sugar get dissolved in it.

5. Now add powdered cashew in it.

6. Cook it 5 to 6 minutes on low flame and stir continuously.

7. Meanwhile grease a plate.

8. When cashew mixture start to leave the pan, transfer it in to the greased plate and let it cool for 15 minutes.

9. Now take a butter paper and grease it.

10. Now place the kaju dough over the butter paper and fold the paper like, butter paper should be on top and bottom.

11. Now roll it to 1/4 inch thickness, remove the butter paper on top.

12. At this time apply the silver vark on that.

13. Set aside for about 30 minutes. Now cut into your desire shapes.

14. Now delicious kaju katli’s are ready to serve… Enjoy  and Happy Rakshabandhan😊

Cookies And Cream Dessert


Whipped cream is a multi purpose ingredient, you can use it in multiple ways and today i am going to share a new way to use whip cream throughout this yummiest Cream & Cookies dessert.

This is a chilled creamy layered dessert with crunchy cookie crumbs. Its not only the quickest recipe but easy as well and you will find its worth more than the time and efforts you will spend on it. Your kids going to love it and going to be more demanding during this summer, moreover you can make it more tasty by using your favorite chocolates in it.

So lets get start to prepare this yummy cookies and cream dessert today.

Ingredients

200 ml whipping cream

1 table spoon icing sugar

2 table spoon hazelnut spread

1 tea spoon vanilla essence

10 oreo chocolate sandwich cookies

Instructions

1. To prepare this recipe first of we need to whip the cream.

2. Take a bowl and add whipping cream in it and whip it until it becomes thick in consistency, then add vanilla essence and icing sugar in it,  mix well.

3. Now divide this cream into two equal portions.

4. Take one portion and add hazelnut spread in it and mix well.

5. Now coarsely crush the oreo cookies.

6. Now take small glasses and set them all three layer by layer – first hazelnut flavored whip cream then cookie crumbs over them and then simple sweet whip cream, likewise prepare all glasses and garnish them with your favorite chocolate.


Now this delicious dessert is ready…serve chilled!!😊👍

Shahi Kheer/Paneer Payasam/Paneer ki kheer


Basically Paneer kheer is a Bengali dessert, It is also known as chenna kheer in Bengal.

As per reviews that we had, it is not only the super mouth watering dessert of India but even outside India too. You can prepare this kheer on any special occasion and for sure that new dessert will add lot of value in taste.

This is one of the easy recipe but yes little bit of time consuming as well but for sure its taste worth the time we arranging it.

Paneer kheer is purely milk based recipe. I am using home made paneer but for easier use, you can get it from outside… So lets get started to make this delicious dessert.

Ingredients

1 liter full cream milk.
250 gram cottage cheese (grated).
1/2 cup sugar.
50 gram pistachios (chopped)
50 gram cashews (chopped)
1 pinch saffron
1/2 tea spoon green cardamom powder

Instructions

1. To prepare paneer kheer first of all we need to heat the milk in a thick bottom pan.

2. Boil the milk and then let it simmer utill it becomes thicker in consistency.

3. Once milk has thickened, add paneer, cardamom powder, saffron, sugar and chopped dry fruits in it.

4. Cook this mixture on low heat for about 3 to 4 minutes.

5. Now remove it from the flame and garnish with dry fruits and saffron.

I love chilled kheer but you can serve as your choice warm or cold!

Wheat Flour Chocolate Brownie(Eggless)


On the special Occasion of “Mothers Day” today i am gonna share a sweet recipe which is my all time favorite and it is as sweet as moms love.

I am dessert lover and brownies are my all time favorite. Some people like fudge brownies but i like cakey and more chocolatey.

Brownies are one of American best culinary invention. To make it more healthier i am using wheat flour instead of all purpose flour. You can prepare it in Microwave and cooker also but i am going to a share oven method.

Ingredients

1.5 cup wheat flour
85 gms butter
100 gms dark chocolate
3.5 table spoon Cocoa powder
1/2 cup + 2 table spoon sugar
1 tsp vanilla essence
1 tsp baking powder
1/2 tsp baking soda
2 table spoon yogurt
1/4 cup milk(luke warm)
1/2 cup chopped walnuts
1/4 cup chopped almonds
Instructions

1. To prepare Wheat flour eggless chocolate brownie we need to preheat the oven at 180℃.

2. Now mix the dry ingredients together in a big bowl – wheat flour, cocoa powder, baking soda, baking powder.

3. Now sift the mixture 2 times and set aside.

4. Now take a big bowl, add chocolate and butter together and melt it in the Microwave (at medium temp for 1.5 mins) or double boiler. Meanwhile grease the baking tin.

5. Now take it out and mix well, after mixing add sugar, vanilla, whisked yogurt and nuts together and mix it very well.

6. Now add wheat flour mixture in it and mix well, pour this mixture into the greased tin, tap it 2 to 3 times, sprinkle  some crushed chocolate and walnut over it and then bake it in preheated oven for about 25 to 30 minutes.

 

7. When it is cool completely, cut into squares shape and serve with hot tea and enjoy it with your mamma… Happy Mothers Day!!

There are many varities and flavors of Peda like chocolate peda, kesar peda and normal peda. Today i am going to share basic peda recipe because we are in Navratri fasting period. Recipe is very simple which contains Khoya, powder sugar and dry fruits. This is one of the old indian traditional sweet and famous for its taste. So lets start making this yummy sweet….😊

Ingredients

1/2 cup khoa

1/2 + 1 tbsp powder sugar

1 tsp green cardamom powder

1 tsp coarsely grounded pistachios

 

Instructions

 

1. Take a big plate add khoa, powder sugar and cardamom powder in it.

 

2. Mix them very well with greased hands.

 

3. Now make smooth lemon sized ball out of the mixture and slightly flatten the balls by pressing gently with your palm.

 

4. Garnish with grounded pistachios and serve with cold or hot milk as your choice ….during Navratri this is very good option for dessert.

which is very tasty and delicious combination of cottage cheese and fresh green peas. This simple mutter paneer curry is prepared by fresh tomato puree, onion and spices only. No cream, no nuts and no khoya are used in it but for the creamy texture i used little amount of corn starch. Mutter paneer can be served with Rice, roti, paratha and with all types of indian bread. So now lets start to make this simple mutter paneer curry.

 

Ingredients

350g cottage cheese

200g fresh green peas(boiled)

1 medium size onion (Finley chopped or grated)

1 cup tomato puree

1 tsp grated ginger

1 green chilli (chopped)

Pinch of asafoetida

1/2  tsp cumin seeds

1 bay leaves

1 inch of cinnamon stick

1 tbsp coriander powder

1/2 tsp turmeric

1/2 tsp red chilli powder

1 star anise

1 tsp corn starch

1/2 tsp sugar

2.5 tbsp butter or oil

Salt to taste

 

Instructions

 

1. For making mutter paneer first of all we need to cut the cottage cheese into our desire shapes.

 

2 Now take a nonstick pan and add 1 tbsp of butter in it, then keep cottage cheese pieces on it and roast until the cheese becomes a light golden color. (As shown in pictures)

3. Take the cheese pieces out and keep aside on absorbent paper.

 

4. Now heat remaining butter in a pan and add cumin seeds, bay leaves, asafetida, star anise, cardamoms and all whole spices, roast them 2 or 3 seconds.

5. Add chopped onion in it and saute it for 4 to 5 minutes on medium heat.

6. Add fresh tomato puree, ginger paste, chopped green chilli, turmeric, coriander powder, chilli powder and cook until the mixture separate from the butter or oil. Meanwhile mix cornstarch with 2 tbsp of water and keepaside.

7. Now add prepared peas, cottage cheese, salt and mix well.

8. Add half cup of water and cook on medium heat.

9. For thicken the gravy add corn starch mixture mix well . Cover the pan and let it cook for 2 to 3 minutes.

10. Now turn off the flame and garnish it with fresh coriander leaves. Serve with Rice, roti, pratha, naan as your choice.

मटर पनीर

(बेसिक रेसिपी)

आवश्यक सामग्री

350ग्राम पनीर

200 ग्राम ताज़ी हरी मटर(उबली हुई)

1 मध्यम आकार की प्याज़ (बारीक़ कटी हुई या कद्दूकस करी हुई)

1 कप पिसे हुए टमाटर

1 छोटी चम्मच कद्दूकस करी हुई अदरक

1 हरी मिर्च (बारीक़ कटी हुई)

1 पिंच हींग

1/2 छोटी चम्मच जीरा

1 तेजपत्ता

1 इंच दालचीनी का टुकड़ा

1 बड़ी चम्मच धनिया पाउडर

आधा छोटी चम्मच हल्दी

आधा छोटी चम्मच लाल मिर्च पाउडर

1 चक्र फूल

1 छोटी चम्मच कॉर्न स्टार्च

आधी छोटी चम्मच चीनी

2.5 बड़ी चम्मच मक्खन

नमक स्वादानुसार

धनिया पत्ती सजावट के लिए

 

निर्देशानुसार बनाएं

1. मटर पनीर बनाने के लिए सबसे पहले हम पनीर को अपने मनचाहे आकार में काट लेंगे.

2. एक नॉनस्टिक पैन में 1 बड़ी चम्मच मक्खन डालकर उसे मध्यम आंच पर गरम करें और इसमें पनीर के टुकड़ो को सुनहरी होने तक भूनें.

3. अब पनीर के टुकड़ो को पैन से निकाल कर    सोखने वाले पेपर पर रखकर, एक तरफ रख दें.

4. अब पैन में बचा हुआ मक्खन गरम करें और इसमें जीरा, तेज पत्ता, हींग, चक्र फूल, इलाइची और सभी साबुत मसाले डालकर 2 से 3 सेकंड तक मध्यम आंच पर भूनें.

5.अब इसमें कटी हुई प्याज़ डाले और मध्यम आंच पर 4 से 5 मिनट तक अच्छी तरह भूनें.

6.अब पीसे हुए टमाटर, अदरक पेस्ट, कटी हुई हरी मिर्च, हल्दी, धनिया पाउडर और मिर्च पाउडर मिलाकर तब तक भूनें जब तक मसाले से तेल अलग न हो जाए. (तेल से अर्थ है पिघला हुआ मक्खन). इसीबीच कॉर्न स्टार्च में 2 बड़ी चम्मच पानी मिलाकर एक घोल तैयार करें और एक तरफ रख दें.

7. अब इस भुने हुए मसालें में उबली हुई मटर, पनीर और नमक डालकर अच्छी प्रकार से मिलाए.

8. अब इसमें आधा कप गरम पानी डालकर इसे मध्यम आंच पर पकाएं.

9. अब ग्रेवी को थिक बनाने के लिए इसमें कॉर्न स्टार्च वाला मिक्सचर मिलाएं और पैन को ढककर 2 से 3 मिनट तक पकाएं

10. अब गैस बंद कर दें और इसे ताज़े धनिया की पत्ती के साथ सजाकर, चावल, रोटी, पराठा या नान किसी भी चीज़ के साथ अपनी पसंद के अनुसार परोसें..😊

Milk powder or khoya chhena burfi is a very delicious indian sweet.You can make it on any special occasion like Holi, Diwali , Rakhshabandhan or anytime whenever you are in mood to eat somthing sweet.It is very easy to prepare and very delicious in taste, for prepare this yummy sweet you just need chhena, milk powder, condensed milk, clarified butter, food color (optional) and some pistachios only. So lets celebrate this Rakshabandhan with this delicious indian sweet Milk powder chhena burfi.

Ingredients

1.5 liter Milk

2 tbsp lime juice or white vinegar

1/2 cup sugar

1/2 cup milk powder

1 cup condensed milk

4 green cardamom (crushed)

3 tbsp clarified butter (ghee)

1 tbsp pistachios (chopped)

1/8 tsp saffron (optional)

1 or 2 drops yellow food color (optional).

 

Instructions.

1. We need to prepare chhena first. Boil the milk on high heat in a thick bottomed pan.

2. As soon as milk starts boiling turn the heat medium and then add white vinegar or lime juice in it. Keep on stirring the milk very slowly with a spoon.

3. In about 2-3 minutes complete whey will be seprated from chhena, pour the curdled milk into pan or bowl lined with a thin cotton napkin.

4. Once you are done adding all the curdle milk then bring together the edges of the cotton napkin and gently squeeze out the remaining whey from it.

5. Rinse the collected bundle of chenna in water, by this you will get rid of the after taste and smell of both lime juice or vinegar,keep a weight on the chenna bundle for 6 to 7 minutes.

6. Chenna is ready now.

7. Now mash the chhena coarsely and add sugar, condensed milk, cardamom powder and ghee. Mix well.

8. Now heat the mixture in a thick bottom pan.

9. When sugar completely dissolve add milk powder and cook on medium heat with constant stirring until the mixture become thick and starts leaving the sides of the pan.

10. Switch off the flame and spread onto a greased plate. And garnish with pistachios and saffron.
