Matar Paneer Masala


As we know Matar Paneer is the most popular vegetarian dish from Indian cuisine, and in north India you can have dish this in any vegetarian restaurant easily. So today i am going to share this recipe of delicious, creamy and rich matar paneer masala, which is best option for party meal and you can also make this delicious curry when you want to eat somthing special at home only.

It is an easy and super quick recipe, for this yummiest curry i have blended sauted cashews, onions, whole spices along with fresh tomatoes. And then cook fresh green peas and cottage cheese cubes along with prepared mixture, This is what makes the dish simply special and aromatic as well.

You can serve this dish with rice, roti , paratha or as your choice but nothing can beat the taste of butter naan. So if you want to enjoy a perfect flavour then enjoy this special matar paneer masala with butter naan only.😋
Ingredients

250 grams cottage cheese cubes
1.5 cup green peas (boiled or frozen)
2 medium-sized onions (chopped)
3 medium-sized red tomatoes( chopped)
1 green chilli
1 tea spoon ginger paste
10 to 12 cashews
1/2 tea spoon cumin seeds
4 to 5 pepper corn
4 cloves
6 green cardamom
1/3 tea spoon fenugreek seeds
1 tea spoon turmeric powder
1 tea spoon degi mirch powder (red pepper)
1/2 tea spoon coriander powder
1 table spoon kasoori methi
1/3 tea spoon garam masala
Salt as taste
2 table spoon oil
1 tea spoon clarified butter
Handful coriander leaves for garnishing (optional)
Water as needed

Instructions

1. Firstly heat 1 table spoon oil in a deep pan then add pepper corn, cardamom, cloves, fenugreek seeds in it and just after 3 to 4 second add chopped onion and cashews in it and saute until it becomes translucent.

2. Now add tomatoes in it and saute them for about 4 to 5 minutes, cook coverded until they become soft and mushy.

3. Now turn off the flame and cool this completely, then with the help of blender make smooth paste of it, then keep aside.

4. Now heat remaining oil in a pan add cumin seeds, turmeric powder, chilli powder and coriander powder, finely chopped green chilli, ginger paste and salt, mix well and then add prepared gravy in it and stir well.

5. Now add green peas, if using fresh peas, boil them until tender then drain and use. If using frozen peas then soak them into hot water for few minutes and then drain and use.

6. Now saute until it leaves the pan, keep stirring it to prevent burning. Then add 1.5 cups of water in it, add more water if needed mix well to make perfect consistency gravy.

7. On medium flame, cook it for about 8 to 9 minutes until traces of oil appear over the gravy.

8. Now add cottage cheese cubes in it, (i used homemade cottage cheese) then mix and cook for about 2 to 3 minutes.

9. Then add crushed fenugreek leaves and garam masala in it…. now transfer this delicious matar paneer into the bowl and pour the clarified butter and coriander leaves on it and serve hot with butter naan….Enjoy😋

Spicy Daliya Pulav (broken wheat)

Dalia pulao is simple and healthy version of pulao. Dalia or broken wheat is very healthy, nutritious, high in iron & fibre. Dalia is cooked with water and then mixed with fried vegetables. You may mix any type of vegetable and grains with dalia to make it more delicious…

Ingredients

1.Broken wheat / dalia = 1.5 cup
2. Water = 4.5 cups
3.Onion (chopped or sliced) = 1 4.Green peas (boiled) = 2 tbsp
5.Carrot (peeled and chopped) = 1 (small)
6. Potato (peeled and cubed) = 1
7. Green chillies slit =2 (adjust as per the taste)
8. Capsicum (chopped) = 1
9. Pinch of (Asafotida)hing
10. Turmeric (optional) = 1/2 tsp
11. Cumin seeds = 1/2 tsp
12. Coriander powder = 1 tsp
13. Salt to taste
14. Butter = 3 tbsp
15. Garam masala = 1/2 tsp
16. Chat masala = 1 tsp
17. Sweet corn = 2 tbsp
18. Red pepper powder = 1 tsp
19. Tomato (chopped) = 2
20. Ginger paste = 1 tsp
21. Fresh coriander leaves = 1tbsp

Instructions

1. Dry roast daliya or broken wheat till you get a nice aroma.

2. Cook broken wheat on low flame along with potato and carrot in 4.5 cups of water. Cook it until it gets properly done. Switch off the flame and set aside.

3. Heat butter in a non stick pan, saute the onions till translucent. Add ginger paste,tomatoes and saute for two minutes.

4. Add the all chopped vegetables, boiled peas and sweet corn and fry for 3 to 4 minutes. Add salt and all spices and mix well.

5. Now add cooked broken wheat or daliya and mix well. Cook it for 2 to 3 minutes(stir continue).

6. Switch off the flame and serve garnished with lime slices and sweet corn or as your choice.
