Lassi is a very healthy, digestive and refreshing, North Indian drink to have in the summers. Normal and easiest version always is the plain one but hard to maintain the consistency of taste and that is how flavored lassi came into the picture.

Kids are always into some specific flavors which are working in all categories like Chocolate, Mango, Vanilla etc but Mango is the favorite option during summer. Mango lassi is not best just because of its taste but best for health also as it contains lot of healthy fats and Vitamins as well. So this mango lassi is a perfect combo of health pack. The best time to drink this lassi is breakfast time or it is best option during fast because it keeps your body energetic full of day.

Ingredients
1 cup fresh plain yogurt (chilled)
1/2 cup milk (chilled)
350 gram chopped ripe mango
2 tablespoons sugar

Instructions

1. To prepare mango lassi, add all ingredients together in a blender jar.

2. Blend this mixture for about one to two minutes or puree until smooth..
Serve immediately..Enjoy😊

Flavoured Almond Milk


When it comes to being healthy, there are few selected things comes in mind and Milk is one of them.

It is the best source of calcium for all age groups. Sometimes kids or included adults are not like to drink plain milk, that time flavoured milk is a best choice to go ahead with. There are so many options of flavoured milk like chocolate, strawberry, vanilla and all, almond flavoured milk is also one of them. But it is more than flavoured milk because its made by almond and almonds are among the world’s best sources of vitamin E, it contain lots of healthy fats, fiber, protein and magnesium as well. So this flavored milk is a perfect combo of health pack.

The best time to have this drink is a breakfast time or it is the best option during fasting because it keeps your body energetic full day.

Ingredients

25 almonds
1/8 tea spoon saffron
2 green cardamom (crushed)
500ml milk
Sugar as to taste

Instructions

1. To prepare this healthy milk, first we need to wash and soak the almonds overnight or atleast 7 hours.

2. Now drain the excess water and peel the skin of almonds (meanwhile boil the milk in a thick bottomed pan).

3. Now add peeled almonds into the blending jar and with the help of little water make a smooth paste of it.

4. Add this paste into the boiling milk and let it simmer for 3 to 4 minutes.

5. Now add sugar, saffron and crushed cardamom in it and mix well. And let it simmer another one minute.

6. Now turn off the flame.


Super healthy Almond Milk is ready now.You can serve this milk hot or cold as your choice.

Christmas Bundt Cake

Fruit cake is one of the key element which is always enriching Christmas celebration. It is in demand throughout the year but fruit cake is traditionally served during the Christmas and that is how more important than normal period of the year. It is full of dry fruits and nuts.

Traditional version contain rum soaked fruits but today I will share quicker and easier version of Christmas cake. This bundt Christmas cake does not contain alcohol and eggs and yet its texture is filled with moist and taste will be as equal good as having egg in it.

In this recipe, I am using all the necessary fruit cake ingredients, like dried plum, tutti fruity, cherries, dried fruits, dates and some spices to make it more flavourful. So lets begin to prepare this rich and delicious cake on Christmas celebration.

Ingredients

1.5 cup all purpose flour
1/2 cup brown sugar
1/2 cup condensed milk
1/2 cup luke warm milk
100 gram unsalted butter (room temperature)
Pinch of salt
1/4 tea spoon nutmeg powder
Pinch of cinnamon powder
1/2 tea spoon green cardmom powder
1 table spoon vanilla essence
1 tea spoon baking powder
1/2 tea spoon baking soda
1/2 tea spoon orange zest
1/2 tea spoon lemon zest
50 gram dried plum (seedless & chopped)
50 gram tutti fruity
100 gram walnuts (chopped)
100 gram almonds (chopped)
100 gram chashew nuts (chopped)
70 gram raisins
50 gram dates (seedless and chopped)
50 gram pineapple chunks
7 to 8 cherries (chopped)
1/2 tea spoon butter for greasing the cake tin or pan

Instructions

(Preheat the oven to 350 degree F or 180℃ for at least 10 minutes. And grease the cake tin with butter and set aside)

1. To prepare this rich bundt cake, first you need to take a big bowl, now add plain flour, baking powder and baking soda in it.

2. Now mix this mixture with spoon and then sieve this flour two times and set aside.

3. Now again take a big bowl and add butter, brown sugar, condensed milk in it and beat them together until mixture become fluffy.

4. Now add cinnamon powder, nutmeg powder, cardmom powder and vanilla essence in it and mix well.

5. Now add flour mixture into wet mixture and mix well. Remember do not overmix it.

6. Add orange zest, lemon zest, all nuts and fruits in it, and add milk as needed for the right consistency, then mix well.

7. Pour this batter into prepared cake pan or tin. Lightly tap it on the countertop. So batter will spread out evenly and if there are any air bubbles, will be removed as well.

8. Bake into preheat oven for 35 minutes.

9. Check the cake by inserting a toothpick in the center of the cake. If it comes out clean that means cake is ready.

Garnish as your choice and serve hot… or cold as your taste.. Merry Christmas!

Note..
Before adding mixed nuts in the batter, sprinkle some plain flour over them and spread it well .(Dusting the dried fruits with some flour before incorporating them in the batter helps in even distribution preventing them from sinking at the bottom of the cake).

Shahi Kheer/Paneer Payasam/Paneer ki kheer


Basically Paneer kheer is a Bengali dessert, It is also known as chenna kheer in Bengal.

As per reviews that we had, it is not only the super mouth watering dessert of India but even outside India too. You can prepare this kheer on any special occasion and for sure that new dessert will add lot of value in taste.

This is one of the easy recipe but yes little bit of time consuming as well but for sure its taste worth the time we arranging it.

Paneer kheer is purely milk based recipe. I am using home made paneer but for easier use, you can get it from outside… So lets get started to make this delicious dessert.

Ingredients

1 liter full cream milk.
250 gram cottage cheese (grated).
1/2 cup sugar.
50 gram pistachios (chopped)
50 gram cashews (chopped)
1 pinch saffron
1/2 tea spoon green cardamom powder

Instructions

1. To prepare paneer kheer first of all we need to heat the milk in a thick bottom pan.

2. Boil the milk and then let it simmer utill it becomes thicker in consistency.

3. Once milk has thickened, add paneer, cardamom powder, saffron, sugar and chopped dry fruits in it.

4. Cook this mixture on low heat for about 3 to 4 minutes.

5. Now remove it from the flame and garnish with dry fruits and saffron.

I love chilled kheer but you can serve as your choice warm or cold!

Healthy Coconut Popsicles

Coconut milk is a good source of several vitamins and minerals.

It can improve the health of the digestive system and promote digestion. Coconut milk can be used in a variety of recipes and today i am going to share one of them. It is coconut milk Popsicles, this is very easy recipe and very healthy for kids and all other ages.

In this recipe we will make coconut Popsicle with fresh coconut milk and some other ingredients.

Ingredients

1 fresh coconut
1/2 cup condensed milk
1 tea spoon custard powder

Instructions

1. To prepare healthy coconut Popsicle, first of all crack coconut shell and remove coconut from it.

2. Now cut the coconut in small chunks or you can grate them.

3. Now add 1 cup of water and coconut chunks in blender and grind them very well.

4. Strain this mixture into muslin cloth and squeez out all the coconut milk from the muslin cloth.

5. Now coconut milk is ready, pour this milk in a sauce pan add condensed milk, 1 tea spoon custard powder in it and mix well.

6. After mixing, boil this mixture and set aside to cool.

7. Pour this mixture evenly into the popsicle moulds and keep it into the freezer at least 3.5 hours or overnight.

To easily remove the ice pops, run under water to help loosen from the mould.

Then serve and enjoy!!

I like Coconut flakes in my coconut Popsicles so i add 2 tea spoon coconut flakes in it.

Homemade Cottage Cheese Or Paneer

Cottage cheese or paneer is one of the easiest cheese to make, If you’ve never tried making cheese, you’ll be amazed to learn that it can be as fast and easier as making tea😜. Cheese making recipe is easy, quick and very useful. Cheese can be used in different ways, you can use it as salad, dessert, vegetables, plain or some other uses. Cottage cheese is easily available in market but homemade cheese is more comfortable to use because its pure and hygienic.

Its require few ingredients..So lets begin to make this useful recipe..

 

Ingredients


1.5 liter Milk

2 tbsp or as required white vinegar or lemon juice.

 Instructions


 

1. First boil the milk on high heat in a thick bottomed pan.

2.As soon as milk starts boiling turn the heat medium and then add white vinegar or lime juice in it. Keep on stirring the milk very slowly with a spoon.

3. In about 2-3 minutes complete whey will be seprated from paneer, pour the curdled milk into pan or bowl lined with a thin cotton napkin.

4.Once you are done adding all the curdle milk then bring together the edges of the cotton napkin and gently squeeze out the remaining whey from it.

5. Rinse the collected bundle of paneer in water this will get rid of the after taste and smell of both lime juice or vinegar,keep a weight on the paneer bundle for 1 to 2 hrs.

There are many varities and flavors of Peda like chocolate peda, kesar peda and normal peda. Today i am going to share basic peda recipe because we are in Navratri fasting period. Recipe is very simple which contains Khoya, powder sugar and dry fruits. This is one of the old indian traditional sweet and famous for its taste. So lets start making this yummy sweet….😊

Ingredients

1/2 cup khoa

1/2 + 1 tbsp powder sugar

1 tsp green cardamom powder

1 tsp coarsely grounded pistachios

 

Instructions

 

1. Take a big plate add khoa, powder sugar and cardamom powder in it.

 

2. Mix them very well with greased hands.

 

3. Now make smooth lemon sized ball out of the mixture and slightly flatten the balls by pressing gently with your palm.

 

4. Garnish with grounded pistachios and serve with cold or hot milk as your choice ….during Navratri this is very good option for dessert.
