*Daal Chawal With Tangy Mango pickle*
Daal Chawal is a very famous dish from north indian cuisine. It is a simple yet delicious meal. Lentils are good source of protein. Its is great meal for kids lunch box too.

Ingredients
Red Split Lentil = 1/2 cup
Moong split lentil = 1/2 cup
Turmeric = 1/2 tsp
Pinch of Asafotida
Red chilli powder = as per taste
Coriander powder = 1 tsp
Mixed spice = 1/2 tsp
Cumin seeds = 1/2 tsp
Whole red chillies = 4
Salt as per taste
Clarified butter = 2 tbsp
Onion (finely chopped) = 1 medium
Tomatoes( finely chopped) = 2
Green chillies (chopped)= 2
Ginger paste = 1/2 tsp
Coriander leaves = 1 tsp
For Rice
Basmati Rice = 1 cup or glass
Cloves = 2
Clarified butter = 1 tbs
Salt = 1/2 tsp
Instructions
For Daal
1. Mix both lentils together and rinse thoroughly with water.
2. Soak in 2 cups of water for about 15 minutes.
3. Pressure cook lentils with 3 cups of water,turmeric, asafotida and salt over medium-high heat for about 10 minutes or until it gets tender.
4. Keep the boiled daal aside.
For Tadka or tempering
1. In a pan heat clarified butter , add cumin seeds and let it splutter.
2. Add whole red chillies and stir it for 15-30 secs.
3. Now add onion and ginger, cook for about 3-4 minutes. Stir continuously.
4. Now, add chopped tomatoes , green chillies and cook on medium flame for 2-3 minutes.
5. Add red chilli powder, coriander powder, mixed spice, salt to taste and mix well.
6. After 3 to 4 minutes add cooked lentils mixture and turn the heat to low, stir it well, cover the pan and cook further for 2 to 3 minutes.
7. Daal is ready to serve. Garnish it with fresh coriander leaves.
For Rice
1. Put a large pan of salted water on a high heat, and bring to the boil.
2. Rinse the rice until the water runs clear.
3. Add rice, clarified butter and 2 cloves to the boiling water.
4. Cover the rice with a lid and cook on very low flame about 15 to 18 minutes.
5. After 18 minutes remove from the heat and keep aside for 10 minutes. Then check if rice are ready, serve immediately. If not ,cook on low flame again and then serve with daal and mango pickle.
* दाल चावल* (तीखे आम अचार के साथ)
आवश्यक सामग्री
*दाल के लिए*
लाल दाल धुली हुई = 1/2 कप
मूंग दाल धुली हुई = 1/2 कप
शुद्ध घी = 2 बड़ी चम्मच
जीरा = 1/2 छोटी चम्मच
लाल मिर्च पाउडर = स्वादानुसार
हल्दी = 1/2 छोटी चम्मच
धनिया पाउडर = 1 छोटी चम्मच
गरम मसाला = 1/2 छोटी चम्मच
हींग = एक पिंच
साबुत लाल मिर्च = 4
प्याज़ (बारीक़ कटा) = 1 (मध्यम आकार)
टमाटर ( बारीक़ कटे हुए) = 2
हरी मिर्च (बारीक़ कटी हुई) = 2
अदरक पेस्ट या कसा हुआ = 1/2 छोटी चम्मच
हरा धनिया पत्ति = 1 छोटी चम्मच
*चावल के लिए*
बासमती चावल = 1 कप या ग्लास
लोंग = 2
नमक = 1/2 छोटी चम्मच
शुद्ध घी = 1 बड़ी चम्मच
निर्देशानुसार बनाएं
1. दोनों दाल को एक साथ मिलाकर पानी से अच्छी तरह धो लें.
2. धोने के बाद दो कप पानी में 15 मिनट के लिए भिगोकर रखें
3. प्रेशर कुकर में दाल,नमक ,हल्दी, हींग में 3 कप पानी डालकर 10 मिनट तक मीडियम हाई हीट पर पकाएं या दाल के पक जाने तक पकाएं .
4. अब इस दाल को एक तरफ रख दें
तड़का लगाने के लिए
1. एक पैन में घी गरम करें, इसमें जीरा डालकर चटकाएं या भूनें
2. साबुत लाल मिर्च डालकर 15 – 30 सेकंड तक चलायें.
3.अब प्याज और अदरक पेस्ट डाले और 3-4 मिनट तक लगातार चलाते हुए पकाएं.
4. टमाटर और हरी मिर्च डालकर 2-3 मिनट पकाएं.
5. अब लाल मिर्च पाउडर, धनिया पाउडर, गर्म मसाला और स्वादानुसार नमक डालकर अच्छी तरह मिलाएं.
6. 3-4 मिनट बाद इसमें उबली हुई दाल को डालकर अच्छी तरह मिलाएं और धीमी आंच पर ढककर 2 से 3 मिनट तक रखें
7. अब दाल परोसने के लिए तैयार है. इसमें धनिया पत्ती डाल कर चावल के साथ परोसें
चावल के लिए
1. एक बड़े पतीले में 2 कप पानी और नमक डालकर तेज आंच पर उबालें
2. चावल को पानी से तब तक साफ़ करें जब तक चावल से पानी बिल्कुल साफ़ आना शुरू हो जाए
3. अब चावल, लोंग, और घी को उबलते हुए पानी में डालें
4. चावल को ढक्कन से ढक दें और धीमी आंच पर 15 से 18 मिनट तक पकने दें
5. 18 मिनट बाद गैस बंद कर दें और 10 मिनट तक चावल को ऐसे ही रखे रहने दें. उसके बाद चावल को चैक करें और परोसे और यदि चावल पके नहीं है तो उन्हें फिर से ढककर धीमी आंच पर पकाए और दाल व् आम के आचार के साथ परोसें..
