Falafel

Falafel are fried chickpeas fritters which are often served with tahini sauce. It is a typical middle eastern food, which is most popular in breakfast and as in snacks as well. Falafel are not only good in taste but even they are great source of protein as well. There are so many options to make this recipe, and here i am sharing traditional one. So lets begin to prepare falafel now..

Ingredients

1 cup dry chickpeas( raw)

1 onion (roughly chopped)

1 tea spoon cumin seeds

1 tea spoon coriander powder

1 inch ginger piece

50 gram fresh coriander leaves

1/2 tea spoon chaat masala

1/4 tea spoon mixed spice(garam masala)

1/4 tea spoon black pepper powder

1 table spoon lemon juice

2 green chillies

2 table spoon all purpose flour

Salt to taste

Oil for deep fry

Instructions

1. To prepare this recipe firstly we need to wash and soak chickpeas for overnight or minimum 8 hours.

2. Now rinse and drain the chickpeas in a colander.

3. Add chickpeas to a food processor along with ginger, onion, green chillies, coriander, salt and all spices. Then process the mixture until it become a paste.

4. Now add all purposes flour and lemon juice in it and mix well, then refrigerate this mixture at least for an hour.

5. After one hour, heat oil in a pan and make lemon sized ball from the prepared mixture and fry them into hot oil on a medium flame until they turn golden in color. Then remove from the oil and place them on absorbent paper and serve hot with tahini sauce!

Mamool/Maamoul


Mamool is a traditional Middle Eastern cookies recipe.

They are semolina based cookies that have three traditional fillings including pistachio, walnut and most demanding dates filling. Traditionally Mamool is formed in a specific design mold but you can also make them with your hands as well.


Likewise other cookies, Mamool is also a baked recipe, after baking, you need to make them cool and coat them with powdered sugar.

Although it is a festive recipe, especially in arab countries people eat them at night during Ramadan and eid, and easter sunday but you can prepare it at home anytime when your sweet tooth craving to have some sweets.

Ingredients

For cookies dough

300 gram semolina
100 gram powdered sugar
1/3 cup milk powder
80 gram all purpose flour
80 gram butter or ghee
1 table spoon cooking oil
1 tea spoon vanilla essence
1 table spoon rose water
1/3 tea spoon nutmeg powder
1/3 tea spoon baking powder
Pinch of salt
Luke warm milk as needed

For Fillings

200 gram dates
80 gram of minced pistachios
80 gram of minced walnut
1 tea spoon green cardamom powder
4 table spoon sugar
2 table spoon water

For yeast mixture

1/2 tea spoon yeast

1/2 tea spoon sugar
3 table spoon water

Instructions

1. To prepare Mamool, first of all we need to take a big bowl and add semolina in it.

2. Now add the melted butter or ghee and oil in it and softly rub the butter and oil into the semolina mixture.

3. Now cover this mixture with cling wrap and leave it for couple of hours.

4. Now add dry ingredients in this mixture like milk powder, powdered sugar, salt, baking powder, nutmeg powder, all purpose flour and mix them well together.

5. Now prepare yeast mixture, take bowl add 3 table spoon water, yeast and sugar in it and set aside until the surface of this mixture becomes foamy.

6. Its time to add wet ingredients into dry ingredients, add rose water, yeast mixture, vanilla essense in to the semolina mixture and with the help of milk knead a soft dough.

7. Cover this mixture atleast for 1 hour.

8. We will use this gap to prepare filling,

For dates filling, firstly remove seed from all dates and grind them until they turn into a paste. You can use this paste as it is, but to make it more flavourful, add some mix nuts in it.

9. For pistachios filling take a bowl add minced pistachios in it and then add cardamom powder, 1.5 table spoon water and sugar in it and mix well together.

10. For walnut filling

Take a bowl add minced walnut in it and then sugar, 1.5 table spoon water then mix them all well together.

11. To make the mamool we use a plastic mold, traditionally there is different kinds of molds for each filling. But you can also prepare them without using any mold or anything.

12. Now take a lemon size ball from the dough and give it to the smooth round shape. Put it in the center of your palm and press slightly.

13. Now add the 1 tea spoon of filling in the center of this flat dough ball. And then fold it up again to give it a ball shape again.(meanwhile preheat the oven )

14. Now put the stuffed ball in the proper mold and press slightly to give it the shape.(like wise prepare all Mamool with all three fillings).

15. Put the prepared Mamool in the cooking tray and bake them on 230℃ until they get colored or for about 15 minutes.

After you bake them, coat them with powder sugar and serve with Kahwa or tea or coffee as your choice..

Note- if you are not having Mamool mold, to give it proper shape, no need to worry, you can decorate the stuffed ball with fork or knife or anything, because it is just a creativity.

Tahini Paste And Tahini Sauce Recipe


Tahini is a paste which is made from grounded sesame seeds. Tahini is a popular staple in Middle East, here are many ways to use tahini… like sauces for meat and vegetables.

Tahini has lots of positive points, it is high in calcium and protein and lots of nutrients those help fight inflammation and provide cardiovascular support.

Preparing tahini is so quick and that we can do with two ingredients, so lets get start to make this easy peasy tahini paste today.

Ingredients

100 gram sesame seeds
2 table spoon olive oil

Instructions

1. To prepare tahini, first of all we need to toast the sesame seeds.

2. Take a heavy bottomed pan add sesame seeds in it, and toast them gently on low flame.

3. When they turns light brown in color, turn off the heat and set them aside to cool.

4. Now add olive oil and sesame seeds in to the food processor, pulse until it become a thick paste form.

5. Now tahini paste is ready, store it in little glass jar.

Tahini Sauce is a popular dip in middle east. Its made from tahini paste and especially used with burgers, falafel and snacks.

Ingredients
2 table spoon tahini paste
1 table spoon water
1 tea spoon lemon juice
1/4 tea spoon salt
1 tea spoon fresh parsley

Instructions

1. To prepare tahini sauce ,grind all them together until sauce is become creamy in texture.

(You can also add garlic in this sauce mixture)

 

Kunafa

Ingredients

200 gm Kunafa pastry
100 gm melted butter
1 tsp sugar
1 tsp vanilla essence

For cream
—————–
1 cup milk
1 tbsp cornstarch dissolved in 2 tbsp milk
1 tbsp sugar
1 tsp vanilla essence

For sugar syrup
————————–
1/2 cup sugar
1/2 water

(For sugar syrup)

1. In a medium saucepan combine sugar and water. Let it boil, stirring, until sugar has dissolved. Keep aside to cool.

(For cream)

2. In a pan, add milk and sugar together. Let it come to a boil.

Add cornstarch mixture to the milk and keep stirring, till the mixture get thickens, then remove from the heat.
Add vanilla essence and keep aside to cool.

For kunafa

4. Cut the kunafa thread into small pieces with hands.

5. Pour melted butter, 1tsp sugar and vanilla essence over the kunafa threads and mix well with your hands.

6. Put half of the kunafa in the cake form and press well with your fingers.

7. Spread the cream over the kunafa as shown in picture and add the other half of kunafa over the cream.

8. Now bake the kunafa in a preheated oven 180℃, for 20 minutes or until it turn golden on top.

9. Take out kunafa from oven and after 10 minutes, flip it in plate.

10. Now pour cooled sugar syrup on the hot kunafa and leave it for 7 to 8 minutes to absorb it all.

10. Now garnish it with crushed pistachios and serve hot….Enjoy😊

200 ग्राम कुनाफा पेस्ट्री
100 ग्राम मक्खन (पिघला हुआ)
1 छोटी चम्मच चीनी
1 छोटी चम्मच वैनिला एसेंस
सजावट के लिए 2 बड़ी चम्मच दरदरा पीसे हुए पिस्ते

क्रीम बनाने के लिए
————————-
1 कप दूध
1 बड़ी चम्मच कॉर्नस्टार्च 2 चम्मच दूध में घुला हुआ
1 बड़ी चम्मच चीनी
1 छोटी चम्मच वैनिला एसेंस

चाशनी बनाने के लिए
—————————-
आधा कप चीनी
आधा कप पानी

निर्देशानुसार बनाएं

(चाशनी बनाने के लिए)
1. एक मीडियम पतीले या पैन में पानी और चीनी लें. इसे उबलने दें , और जब चीनी पानी में अच्छी प्रकार से घुल जाए तब गैस बंद कर दें और इसे ठंडा होने के लिए एक तरफ रख दें।

(क्रीम बनाने के लिए)

2. एक पैन में दूध और चीनी लें और इसे उबालें. दूध उबल जाने पर इसमें कॉन्स्टार्च वाला मिश्रण मिला दें और इसे लगातार चलाते रहें. जब मिश्रण गाढ़ा होने लगे गैस बंद कर दें और इसमें वैनिला एसेंस मिलाकर एक तरफ ठंडा होने के लिए रख दें

(कुनाफा)

3. कुनाफा पेस्ट्री को अपने हाथो से छोटा छोटा तोड़ लें।

4. अब इसमें पिघला हुआ मक्खन , एक छोटी चम्मच चीनी और वैनिला एसेंस डालकर अपने हाथो से इसे अच्छी तरहा मिलाएं।

5. कुनाफा पेस्ट्री की आधी मात्रा को बेकिंग पैन में अपनी उंगलियो की सहायता से दबाकर अच्छी तरह सेट् कर दें।

6. अब इसके उपर क्रीम की परत बनाएं जैसे की तस्वीरों में दिखाई दे रहा है और उसके ऊपर फिर से कुनाफा पेस्ट्री को अच्छी तरहा कवर कर दें।

7. अब कुनाफा को प्रेहेडेट ओवन में 180℃ पर 20 मिनट के लिए बेक करें या जब तक उसकी ऊपरी सतह सुनहरी न हो जाए तब तक बेक करें

8. कुनाफा को ओवन से बाहर निकाल कर प्लेट में पलट लें और इसके ऊपर ठंडी चाशनी डालें. 7 से 8 मिनट इसे ऐसे ही रहने दें ताकि चाशनी कुनाफा में अच्छी तरहा मिल जाए.

9.अब इसे पिस्ते से सजाएं और गरम परोसें….😊
